Dinner
We are making a full Sunday dinner. A whole roasted citrus chicken, rosemary roasted potatoes, and green peas. Homemade blueberry tarts for dessert. A nice white wine to drink.

I took a tortilla put some sun dried tomato, onions, mushrooms, red pepper and some vegan mozzarella. Folded it in half and threw it in the panini press.

We had homemade chicken vegetable soup with toasted baguette bread. Peanut butter cookies for dessert and ice tea to drink.

I had a slice of homemade pizza...mine had: spinach, mushroom, onion, sun dried tomato and vegan cheese. It was tasty..I may snack on it later.

Not making it tonight but I got an idea for what to make for my daughter's early December birthday dinner...
Tasty had a fabulous recipe for chicken parm lasag a. Liz's fave meal is chicken parmesan so mama's gonna make it for her! Its the same premise as lasagna only add thinly sliced and fried chicken breast to the layers. I, of course, would also add veggies. Zucchini at the very least. Mushrooms on half for her bf and I. She's gonna love it! |
I will probably be having popcorn, Tums, and several glasses of wine as we watch the election results come in!

I'm having Mexican food from my local Mexican restaurant. First of all, because I love Mexican food and want something tasty to eat today, and more importantly because the Latino vote is going to carry Hillary Clinton to victory in Florida - cutting off any chance that Trump can be elected president - and of course be so important in many other states like Colorado, New Mexico and Arizona and all over the country!
Now I just have decide what to order. Probably taco plate for lunch and enchilada plate for dinner and appetizers! |
Probably leftovers. And Krispy Kreme donuts for dessert.:jester:

I had light creamy chicken alfredo soup with some Dum Dums and some Aleve. I've had a low grade headache all day long and when I get rid of it, it only lasts for an hour and it's back. Blech.

Omelet, little on the crunchy side - one of my resolutions for 2017 will be no meals or snacks cooked away from home for one full year. Knowing how difficult it will be, I'm starting to work on it now so, hopefully things won’t be so rough come January. I can already see to pull this off, I’m going to have to spend a lot more time carefully budgeting, planning, shopping for ingredients - cooking and cleaning up than I’m used to.

Amy's golden lentil soup. I just love that stuff. It's not low carb but it is healthy.
I also had some "Whisps". If you don't know them, they are fantastic. A serving of 15 Wisps have 100 calories and less than 1 carb! Also 9 grams of protein. I've dined on dark green salads, steamed carrots and fresh wild Salmon, all week long, so tonight I had halibut and jasmine rice with rosemary. Coconut (non-dairy) custard.....for dessert. yummmmy.
And....more dessert, a Voodoo doughnut with a tons of frosting and miniature m&m's. :) |
Last night it was loaded mashed potatoes with bacon jerky bits folded in, mac 'n cheese and a protein bean and rice mix.

We are having boursin chicken with pasta and salad with all the fixings.
Boursin is a very nice rich and creamy French cheese. Yummy! |
Not sure what's on the menu tonight, but I have fresh fruit, my secret stash of chocolate, and hoping for the best (Maybe a green salad and a light serving of meat).
