A couple slices of fresh baked Rosemary bread (store bought) dipped in a tapenade (homemade) of diced vine ripe tomato, avocado, balsamic vinagar, and a pinch of sea salt. A couple dark chocolate squares and almonds for dessert, and a glass of Pinot to wash it down... I love summer. :)

Dinner?

Well, when this sledgehammer stops beating me in the head..

I'd like to grill some pork chops and yellow squash with butter, fresh garlic and some Tony Chachere's More Spice wrapped in foil, along with some broccoli with a little butter and some fresh garlic wrapped in foil. Make a great salad with romaine lettuce, roma tomatoes, baby carrots, red onion, feta cheese, and some balsamic vinaigrette. I'll cook enough for two...

Yeah, that's what I'll be having tonight.. :cheesy:

The remainder of last night's spicy paprika lime chicken, (good stuff!) half of a huge avocado and a hand full of raw asparagus.

Hollylane 06-27-2013 09:14 PM

Baked panko and parmesan encrusted halibut, and the usual (asparagus & mushrooms sauteed with garlic, red pepper flakes, butter, salt, fresh black pepper, rosemary, and olive oil).

Chessie and I will both have a tablespoon of peanut butter for desert (out of view of Obi, who can have nothing but special food). Yum!

Chipotle - chicken and carnitas bowl - it was a grab'n'go kinda night :)

High on the hog....

Since it is an "entertaining friends" kind of evening...

Bacon wrapped dates stuffed with Manchego cheese and walnuts, drizzled with romesco sauce.

A flatbread topped with braised pork shoulder, fromage blanc, Medjool dates, lavender honey, charred fennel, tomato, candied walnuts, and parsley.

Various Spanish wines

Sparkling water

They are bringing dessert so no idea what that will be.

Katniss~~(I love my friends....)

Baked ham, roasted red potatoes and veggies

ahk 06-28-2013 01:52 PM

Not sure yet-- I was thinking leftovers to clean fridge out.

Jesse 06-28-2013 07:40 PM

Tonight I cooked a Nigerian meat pie filling, which is basically a meat, veggie and chili dish with lots of spices added in and then simmered until the veggies are tender. I used lettuce leaves as a shell/rollup rather than a crust. It is very good. :)

I'm ingesting air....and eye balling an avocado....and contemplating a run to MCDs for an ice cream :|

MsBluem 06-28-2013 08:15 PM

About $20 worth of Tom Collinses at my favorite bar.

barnes 06-28-2013 08:26 PM

two microwave cheeseburgers and some cake

Gemme 06-28-2013 08:45 PM

I'm considering going to Katniss' to check for leftovers.

Dinner was pretty decent though. Stir fry slices of beef with mushrooms, red peppers and bell peppers simmered in a ginger soy marinade topped off with orange juice to make it super fragrant.

Nummy actually.

Brisket enchiladas with a jalapeno cream sauce and lots of cheese on top... with 7 layer dip and chips.. For dessert it was some cherry and pineapple ambrosia stuff...Picked it all up at Market Street.. Even better that I didn't have to cook tonight.. :cheesy:

not2shygrrl 06-28-2013 10:45 PM

when its a meatless dinner......

I love half of an avocado, with some Worchester sauce jiggered into the hole and a squirt of ketchup.... then I just dig in until only the empty shell remains!! May sound gross but OMGoodness I get cravings to have this!!
