Tonight, I made tilapia filets with diced onion, red and green peppers, and a few TBS of cream of mushroom soup and it came out delish! The rest of the niblets on the side with a salad and we were set. :)

baked chicken breast
mushroom rice
and sauteed zucchini with bean sprouts

But honestly, I'm really craving tomato soup & a grilled cheese sandwich ~ my favorite comfort food!

That's odd I grew up in the north and always knew what a dumpling was. I guess it's a cultural thing.

Girrrrrrl, you bring me the other stuff and I'll make you as many grilled cheeses as you want. I make them in a cast iron skillet. Perfection!

You're on your own with the tomato soup though. :blink:

EASY CHICKEN AND DUMPLINGS

chicken, 1-2 pounds
1 can cream of chicken
2 cans chicken broth (you can use the boullion cubes)
1 1/2 cup water
1 can peas
1 can carrots
1 package of biscuits (buttered or unbuttered)
(I add celery if I have any)

Cut chicken into small chunks to ensure it will cook. Combine chicken, chicken broth, cream of chicken, water, peas, carrots, and your choice of seasonings, such as parsley, salt, pepper, garlic and onion powder to the Crock Pot and turn it to low (high if you want it to cook faster). Cook until chicken is tender; about 5 hours but this will vary according to your Crock-Pot (newer ones tend to run at a higher temperature).

About 15 minutes before ready to eat, cut biscuits into quarters, roll into balls and place in the Crock Pot. Stir occasionally. Cover again until ready to eat.

This is a simple, crock pot recipe for chicken 'n dumplings.

Hi Lips,

I don't have a recipe for the chicken part of my chicken and dumplings....I just saute minced onion and celery in olive oil, then toss in cubed chicken breast...brown it til it looks right. Then I season with salt, pepper, poultry seasoning, pour in a quart of chicken stock....let it simmer. Pour in a couple cups of milk that I shook up with a few spoonsfull of flour to be a thickener. Mince up some carrot and toss that in with some peas....just til it looks and tastes right.

Once it's thick I mix up my dumplings:

2 tsp. baking powder
3/4 tsp. salt
3/4 c. milk
Don't overmix it...just til it's all blended and the dry ingredients are moist. Take the lid off....let it simmer another 10 minutes. And eat! :eating:

This is what I grew up on instead of chicken and dumplings.

Chicken bot bie or chicken pot pie (Pennsylvanian Dutch). It is still the meal I ask my mom to make for my birthday. The only thing different in our family from the attached recipe is that we do not put corn in it. I don't remember seeing onion in, either. Or the saffron. According to the article everyone tends to have their own family recipe. My mother used my father's mother's recipe.

(Obviously, I have never cooked it, myself!)

It is the best stuff ever!

We have pot pie too when I was younger on Friday nights it was good too no chicken with dumplings that's a southern thing I think but sounds good too would like to try it one day..

It was going to be turkey burgers but I got all creative 'n stuff at the last minute with very nearly the same ingredients. I can't say what it is because Organic's lurking and it's a surprise.
