Good morning everyone! :)

I hate to say this, but....11 days and a wake up until Christmas morning...and I'm not done shopping yet! :seeingstars:

I'm off to a decent start today...got everyone off to work and school, lunches packed for Rooster and Scoote, dishwasher running, laundry folded, first morning emails sent, bank deposit made....

Think it's time for a big ol' stack of blueberry pancakes for everyone. :eating:

Oh Yum with the blueberry pancakes but alas no blueberries this time of year except for frozen which are still good too. Got up early walked the dogs fixed breakfast of eggs and cheese, coffee toast to start the day early. Have to fill prescriptions so off to the pharmacy I go. However it is in a Stop and Shop supermarket so I will do a little shopping too. Thinking about making some delicious christmas cookies for all here in the kitchen. Butter cookies to be exact but don't know which ones yet..have a great day all..

I am adding some hot chocolate to Jo Jo's pancakes! Thank you Jo Jo for breakfast.

I made a loaf of pumpkin bread with dried apples yesterday and it made the whole kitchen and house smell yummy...

Good Afternoon Everyone,

It is a very chilly day here in Northeastern Florida. This wind just blows the cold air right through you...I am thinking of some nice hot homemade chicken noodle soup or spaghetti with marinara sauce for dinner tonight.

I don't have class tomorrow, so I don't have to drive almost 80 miles roundtrip tomorrow and it is supposed to be even colder tomorrow...

I have three cookbooks that I was giving as Christmas gifts over the years. I am looking forward to that long break, anatomy & microbiology has completely fried my brain.

If you get a chance, try that Pillsbury Quick Bread mix, it is delicious. To bad, the pumpkin one is only available around the holidays...I am getting the cranberry one next time.

I actually enjoy Christmas shopping, but I've been struggling with ideas this year. I've got a couple more things to get...and little stuff for stockings as well.

Glad you like that Pillsbury bread Zimmy :) It really is good. I usually bake from scratch, but I found that I like those mixes better than my own quick breads. The only other mix I use is Jiffy corn bread...which is super cheap, and better than homemade (I think).

I've got some over-ripe bananas in the freezer, so will be making some banana cake pretty soon...and Scoote got me the gigantic bag of chocolate chips at BJ's...so probably some chocolate chip cookies as well. :chef2:

We just got back from dinner out...and I'm stuffed full of Reuben and cole slaw....yummy.

Homemade chocolate chip cookies sound very yummy right now!!!

I have used the Jiffy mix and yes it is good.

Good Morning all been up since early this morning and just had a little snack of almond butter and bread yum it was good. Gave some to the dogs and they liked fine, thinking about making dog biscuits for the holidays for the dogs of course and as a treat to them..need a biscuit cutter shaped like a bone.

I hope all you guys are enjoying this cold weather we are having brrr its too cold for me. Walked dogs early and was freezing wish the days of summer was here again..can't wait for spring!! Going to try to sew some more today have to hem scrub pants they are way too long. And need eggs from grocer too for cookies and cakes to make..have a good morning all..

Good to see you Matthew...we miss you when you're not around! Hope Jake and Organic and MountainStar and morningstar and Lady Pamela and....who else are we missing...make it in to breakfast too. On a cold day like today, you need a good start with plenty of fuel!

Thanks Zimmy...Scoote's back is still hurting, but the doctor gave her a stronger prescription last time she was in, and it seems to be helping a little bit at least. She's still not comfortable, but seems to be sleeping a little better...and that always helps.

The Prince is home sick today, Rooster is off to school, and I've vowed to clean up at least a little of my "office mess." I had to work right up until packing day in NY, so shoved some office stuff into boxes, thinking I'd sort through it once we got settled....then worked off of Scoote's kitchen table (nightmare) for more than a month, and all that got shoved into boxes too. End result is I have 3 boxes of assorted paperwork that needs to be either filed or shredded or acted on....and I need to get started on it since it's making me :seeingstars:

By the way, last time Scoote stayed in a hotel for work she brought me back the tiny lotion that was in the room (cuz I love those :) ...so handy for the purse). It's Bath & Body Works Aromatherapy - Orange Ginger and ooooooohhhh it's nice.

Good Morning Jo Jo,

Hope Scoote gets to feeling better and soon! When you and I do get a chance to have lunch or coffee, I will gladly bring you a tube of hand lotion from my stash. I live by hand cream and I always have to have it in my purse. Has Scoote tried Aleve to help with the inflammation? I know when my back starts to hurt, I found that works better than prescription meds.

Thank you for breakfast!!! I am sitting up at Starbucks right now attempting to study for my anatomy final, it seems everyone is having finals this week and are also at Starbucks...

Lisa kept the boys home today bc of how cold it was this morning.

I just bought one of those french press coffee maker and want to learn to use it, have space heater on because of the cold weather, now going to do laundry which is downstairs too cold to do anything but stay in the warm bed and hibernate for the winter...

Oh yeah maybe Jake can help us because I sure could use some coffee right about now.. Chicken marsala sounds great I have soup with some veggies tonight but could go for eggplant parm though..

Chicken Marsala recipe
 
3 Tbsp whole wheat flour
3 Tbsp white flour
1\4 tsp white pepper
1 - 1\2 lb chicken cutlets <fresh>
3 c sliced mushrooms
2 Tbsp thinly sliced shallots
1\2 c Marsala wine <located in the sauce aisle>
1\2 c low sodium chicken broth
2 Tbsp chopped parsley
1\2 tsp chopped fresh Thyme leaf

Directions:
-in a shallow bowl, combine flours and pepper
-dredge chicken in mixture and set aside
-lightly coat a lg nonstick skillet with cooking spray and heat on medium high
-add chicken and sauté until lightly crowned, 2-3 minutes per side
-remove cutlets to a plate and keep warm

-add mushrooms and shallots to pan, stir for 1-2 minutes
-add wine to pan. Reduce to a glaze, scraping any loose brown bits from bottom of pan
-reduce heat and add broth, parsley, and Thyme. Stir, cook until broth reduces by half

-return chicken to pan and simmer for 5 minutes

Serve hot.

Make it a meal:

-mash 1\2 c boiled red bliss potatoes <leave the skin on>, with 1 Tbsp fat free cream cheese, 1 Tbsp skim milk, and salt & pepper

I omitted the salt and used extra virgin olive oil and it was yummy!

good Morning all I'm sneezing too Jo so maybe its going around I don't what it is maybe allergies since I have the space heater on and all it could be dust, just sayin..

WEll Zimmy I hope you did well on your final today or tomorrow whatever it is..great on the move I am sure you will be happy there it sounds like a great town and all. Went to Trader Joe's today gosh darn it it was crowded but bought pumpkin bread mix so going to make that tonight I think and some nice bread too for french toast, I think its a pizza night because I don't feel like cooking and just want pizza and a salad for dinner!!

Congrats on the grade I know it was hard to do!! Today was a trying day to say the least dealing with social services..tonight its hamburgers and veggies and a salad some nice warm food warm you up!! hope you all are having a good day..
