Have you seen that commercial that is simply a grilled cheese sandwich on a griddle? Every time I see it I want one! So yummy!

I found some gluten free Panera bread clam chowder at the bodega by work. It wasn't the best or worst I've ever had. I probably should have just eaten the lunch that I packed though...

Not sure this counts because it's what I'm having for dinner lol, but I'm making falafel for the first time!!! So excited. I love preparing food with friends. It's gonna be a lovely evening.

Now you've got me curious - I've never had falafel so I went and watched a video about making it at home. Looks yummy! Hope you will tell us about your cooking experience. :)

Hi, Mopsie! It went really well! They were a lot easier than I thought to make. I would highly recommend trying it!

This is the recipe we used, except we omitted the yogurt sauce as I'm vegan: https://www.delish.com/cooking/recip...alafel-recipe/

I made some pasta salad with rotini, cucumber, green pepper, feta, and italian dressing. It turned out yummy. :) (Sorta looks like the photo below)

I had a chicken apple sausage link with rice pilaf and pink lemonade. Three Reese's cups and two handfuls of mini club crackers later and I was good.

Today family came over for a "socially distanced" grill out. I had two ears of corn on the cob. (With lotsa butter of course) Plus some rice and then two babybel cheese rounds (or wheels??). I was very full!

I tried a new recipe today. My friend is eating low carb but has been missing Mexican food. So we made this recipe together. (I used "fake meat" by Gardein for mine.) It was yummy! :chef:

Dill pickle sandwich.

Low-carb tortilla spread with cream cheese, topped with the dill pickles, salt and pepper. So good.

I used to have cream cheese and pickles on pita bread, but it works on low-carb tortillas.

Last of the potstickers, some jasmine rice with stir fried mushrooms and green beans. Broccoli zapped in the microwave then with just a bit of sweet teriyaki sauce splashed on. Water to drink and maybe a couple of sugar cookies for dessert. I tripled the recipe, rolled it all into individual balls of dough, then froze 2/3 of them. If I have to thaw them out then I pace myself better than I do if I just bake them all at once and kept some on the counter, in the fridge and freezer fridge.

Emerald Bliss smoothie: parsley, power greens, celery, cucumber, apple, ginger.

Not eating enough veggies and fruit. Am going to include smoothies like this one in my diet. I think the fuji apples will make my diet more low-carb than keto and may slow down the rate I'm losing weight, but that's cool. I can work with that.

I thought I had a bag of fake meat crumbles in the freezer but when I looked, it was not there so I improvised. I still had the tacos that I planned but I baked a breaded chicken patty then sliced it up between the two tacos. On the tacos I put sour cream, guac, chipotle sauce, black beans, a smidge of diced black olives, cheese and the cut up chicken. Taco Bell mild sauce to dip it in. I also had no shredded lettuce but I knew that going into it. I just really wanted a darn taco, y'all.

I was off work today so I tried a new recipe for lunch. I made Yellow Curry with Vegetables and Potatoes. It was pretty good. Though next time I might had some pepper or hot sauce.
