we opted for a dinner that isn't so traditional. Surf and turf!

The most I've done so far..chopped some veggies to marinate to top the green salad.

Then I thought about dessert, not pie, but super easy pumpkin mousse.
Oh, then last min, last night, I stopped to pick up the ingredients to make a 24 hour fruit salad. That will be the lonely left over!

I have the turkey in the oven, I’m also making mashed taters, stuffing, cranberry sauce, rolls, greens, and I picked up a sweet potato pie and whipped cream. I wanted mincemeat pie but my butch spouse hates it so I didn’t bother to get it for just me. I would have ended up eating the whole thing! Her son is not doing well at all since his surgeries so this is the first Thanksgiving that he won’t come see his Mother. His wife is only having her Dad over for dinner, which is fine because after a family drama thing a few years ago we no longer want to be around her anymore. We are enjoying Thanksgiving with just the two of us and my bff will stop by later.

I'm making a fruit salad from my childhood, but I pray it don't take me 24 hours to get it made.............:giggle:

once i went fishing on Thanksgiving morning and when i came home my family had a mess of trout for dinner!

it was the best !

seriously...you start it the night before. It's a recipe we have been using for years...from my Mom's very worn red check Better Homes and Gardens cookbook.

First what we did *not* have today;

We did not go to my parent's house and have a platter of disappointment laced with recrimination. There were no side dishes of mashed feelings, creamed egos, or baked grudges from years gone by. The meal did not end with a big slice of negativity and whipped anger. There was no Tupperware container of depression to cart home.

Instead my teen and I have been enjoying a week in the Fl Keys with sunshine, laughter and loving memories. The actual meal was black bean soup, fresh Cuban bread, grilled grouper with lump crab and lemon butter sauce, fresh grilled asparagus, "good" rice and mojito to drink. Key Lime pie for desert.

But even had we not had such a lovely meal there is still truth in "better a crust of bread in peace, than a feast in a house of strife."

ummm...no cutting occurred! We changed from regular fruit cocktail to the tropical fruit cocktail...I think it's Libby's?

I cooked cheese and Chile chicken in my instapot.

A pound of frozen chicken breasts take just 10 minutes, so I had dinner on the table in 20 minutes after being gone all day.

Right now I am eating a ham sandwich, no sauce on it but put some sweet sandwich stuffers across the top before I closed its lid. Potato sticks on the side ans of course milk to drink.

Now I am going away for a bit to google this instapot Ms TinkerBelly mentioned .... that was fast cooking on the frozen chicken!

My honey suggested Chinese so we went to our favorite place.

I had "amazing" chicken, fried rice and lots of veggies. And an egg roll. My honey had need teriyaki, chicken fingers, boneless ribs and chicken wings. He's a total carnivore. I DID get him to try the tea (oolong) and he loved it. :)

Pressure cook

Make a cake
Make yogurt
Slow cook
Rice cooker

I bought the 8qt size, and you can make small amounts or large amounts of anything you want including a 10lb turkey in 1-1/2 hrs or so. Slightly more expensive to buy the largest size, but I would have regretted buying the smaller size.
