No Einstein's around my neck of the woods either, damn it!

I got to hang out with my favorite toddler all day today so I didn't have time to cook what I had planned. So tonight it was all about quick and easy. I cooked black bean spaghetti (cooks in 4 minutes) then sauteed some onion, threw in the pasta when done and topped it off with a bit of olive oil, nutritional yeast, and a bit of sea salt.

I'm thinking they are mainly in the Midwest but I could be wrong!

Bbq...beef brisket and sausage with double green beans. Sweet tea to drink.

Did yard work today in the brisk sun.... So QFC deli it is! meatloaf,cottage cheese and small salad.

The meal wasn't so exciting with hamburger patties, applesauce and macncheese. What made it interesting was after months of sitting unopened in the box I finally tried using my InstaPot. I made homemade macncheese that was delicious in 4 minutes! Can't wait to look up more recipes. I'm thinking Korean beef ribs next.

There's a restaurant near us that I found completely by accident on Yelp. I am dying to go now! Their menu seems very inventive and *BONUS they have an excellent beer selection. Oh and desserts. Winning combination..........

However.....

My honey has expressed wanting to take a random day trip today. So I'm thinking that Humble Pie (cool name!) will have to wait....

Stir-fry tofu, green beans and red pepper. Kicked the spice up with some chili paste. Ladled over rice and it was very tasty.

Last night was baked chicken and shiratake noodles

We did both. But the restaurant was a dud. Sad when the reality doesn't live up to the dream....

Maybe that's why they named the place Humble Pie? Nothing exciting to see here folks, move along.

The teen has already called dibs on the oven tonight as she is baking Valentine cookies for all her friends. She showed me the rather elaborate Pinterest recipe and all I'll say is "good luck"!

Consequently dinner will be sandwiches and chips and fruit. Fine by me.

Canadian Bacon and pineapple pizza. Is there an emoticon for - face of doom and shame? This is no way to treat a diet.

I need to go to the grocery. Down to the mismatched odd items left. Some gourmet frankfurters and spaghetti squash for dinner. Probably will taste okay. I love spaghetti squash with lots of butter and salt and pepper.

it will be some kind of fast food tonite... as i am heading south to watch my nephews coach his H.S. BB team in play offs...so maybe subway or a taco salad....I hope.
