Supper club
 
So my friend Melinda and I have this little tradition we call Supper Club. It's our way of being frugal but still getting together for dinner. We get together at her place (or mine) and bring our food with us. Tonight I brought leftover stir fry and rice. Melinda had chicken and roasted vegetables. The food was tasty and the conversation was sparkling!

ohhhh I went to one of these when I visited my honey's work site in Rhode Island. It was definitely my kind of place. I even found my (central Mass) local kombucha there. Very cool :)

We are going to Texas Road House for our Valentine's Dinner too, but that won't be until Tuesday - we are running behind :(

Tonight was:
- pizza with Italian sausage, beef, salami, feta cheese, black olives and onions
- 3 Ferrero Rocher chocolates

You're not going to find one up there, but if you travel South and go to one, they have hand cut steaks that are good. They have specials Monday through Thursday for the early birds that are $9.99 each. DC gets chicken fried chicken and I get the 6oz sirloin. They come with 2 sides and yeast rolls. If you like Golden Corral's yeast rolls, you'll like these. They come with a honey butter that's nice.

Here's the menu.

Tonight, I had a salad but was still hungry so DC gave me one of His homemade tacos. I had some candy too. Not a great night for cleaner eating.

I didn’t like the place, but it was probably that location that was so awful.

I had the rib eye, which was so so quality and not done correctly.

Your experience may vary.....

I've had petite white northern beans, baby carrots, tiny garlic cloves and bits of smoked spiral ham simmering in the crockpot, all day long. When I sit for a bowl of soup for supper, later tonight, I'll probably toast some tiny slices of rustic sourdough bread, and have that with my soup.

I had the kale pecan cranberry salad I like so much. The honey mustard horseradish dressing really sets it off and gives it a kick. I also had 2 very small pieces of sourdough bread and some pom cherry juice.

DC had pasta and sauce.

I've got that northern white bean soup with spiral smoked ham, in the crockpot for supper..... but I made an homemade Apple cake, with cherries on top, for dessert. The house smells SO good! It was my afternoon cooking activity while watching the snowfall outside. :balloon:

I was in a training class all day. I sure missed my cereal in my cubicle at work, plus subway footlong for breakfast ... late getting home, for dinner I ate a couple of beef hot dogs from the gas station when I stopped for gas ... gulped them down so quickly I did not taste them much which is a good thing because I know from historical experience they really are not much tasty ... but they did the job and that is what mattered.

mushroom burger-from "eat figs not pigs"
really wonderful veggie burger-the best (in fact)
Caramelized Onions
2 yellow onions, sliced
2 TBS canola oil
1 tsp Kosher salt
Mushroom Patties
1 LB baby bella mushrooms, roughly chopped
2/3 cup vegan & gluten free breadcrumbs
1/2 cup vegan parmesan cheese, optional
2 vegan eggs
1/4 c chopped walnuts (my version)
2 cloves garlic, finely minced
4 tsp olive oil, divided
Salt and pepper to taste
For the Burgers
4 Vegan & Gluten Free burger buns
4 slices vegan cheese of your choice, optional
2 cups loosely packed arugula
2 tsp sherry vinegar
INSTRUCTIONS
Caramelized Onions
Add oil to a saute pan on medium-low heat
Add onions, cover and cook for about 30 minutes, stirring frequently
Remove cover, increase heat to medium-high and cook an additional 6-8 minutes, scraping up any brown bits
If onions are too dry, add about 1/4 water and cook an additional 2-3 minutes
Set aside
Mushroom Patties
In a large skillet on medium heat, add 2 teaspoons oil, garlic and mushrooms. Sprinkle with a pinch of salt and saute the mushrooms until most of the liquid has been cooked out, about 10-12 minutes. Add walnuts.
Remove mushrooms from heat and transfer the mushrooms to a food processor
Pulse mushrooms for about 30 seconds to 1 minute
Transfer the mushrooms to a bowl and combine with vegan eggs, vegan Parmesan cheese and breadcrumbs. Mix thoroughly to combine all the ingredients.
Using your hands, form 4 mushroom patties
Cook the mushroom patties with remaining 2 teaspoons of oil on medium high heat for about 10-12 minutes, flipping halfway through
Serve mushroom patties with gluten free & vegan toasted buns, 1/4 cup arugula tossed in 1/2 teaspoon sherry vinegar, caramelized onions, and favorite vegan cheese slices

Served w/mixed green salad & sweet potato cottage fries

Homemade cookies (for dessert)
