Baked chicken thighs
Green salad -- just greens, those mixed baby ones, with vinegar and oil

Later, I had some strawberries and cream.

Still later, I convinced myself I was still hungry and had some leftover chicken soup. Just the broth with lots of pepper. So good.

Last night, I had pepperoni pizza. Not sure what it will be tonight. If it's pizza, I'll supplement it with a nice salad. I got a great deal on produce yesterday.

I just had a very late lunch of a bunless cheeseburger and broccoli. Fresh broccoli is sooo expensive right now, but this frozen stuff is bad. I ate it. Back to fresh produce though.

- chicken tenders with honey mustard sauce
- jalapeno poppers
- Oreo ice cream
- two bites of a (disappointing*) Russell Stover coconut cream egg

*disappointing because (I forgot from last year) they have reduced the amount of coconut and it is almost entirely just creamy white goo inside the dark chocolate. Not bad, but you can't even taste the coconut, and not worth splurging the calories on, IMHO. I bought a package of 6, and I'll be throwing the rest out.

What about those steamer bags? I've had those and the broccoli didn't taste too bad. Not crunchy, of course, but it didn't taste bad.

Last night, I had a very early dinner followed by a snack because I was up longer than I thought I would. It was pizza and a salad and then my snack was a big honeycrisp apple.

One Pan Eggplant Dinner! It has Eggplant, onion, garlic, chicken, diced tomatoes, seasonings and spinach. I added some cheese on top. Yummo!

I made an homemade vegetable ministrone soup out of vegetable stock, broccoli buds, shitake mushrooms, baby carrots, sweet onion, snow peas, beets, kidney beans and sweet mini peppers (red, yellow and orange, sliced up carefully) and sprinkled quinoa into the soup. There might be a couple of tiny roasted garlic cloves too. And tiny cherub tomatoes (just a few).

It's very delicious and it's what I am having for supper tonight.
