I'm baking two butternut Squash today, so I can use the baked squash for salads (cubed chunks) and then make an batch of creamy butternut soup (hot or cold, depending on the weather).

Tonight, it's Butternut soup and an small organic salad.

Water to drink.

Dessert: 1 Brownie Crunch Think Thin (tm) high protein bar.

I'm not picky about my greens. I like to mix them up although I think arugula works especially well for this salad. Some recipes call for jalapeno and mint but I find that I can do without the mint if I don't have any on hand and if I use mild jalapenos, it adds tartness and a mild punch of flavor without burning my taste buds. I like my watermelon cut into small bits and/or cubes and my feta crumbled. I put a little of the jalapeno juice in as well as a dash of balsamic vinaigrette and some of the watermelon's juice because I don't like 'dry' salads. Mix that up and let it marinate for about 10 minutes and I'm a happy camper.

I got in later than expected from a seminar and mentally I'm exhausted and not in the mood to cook so dinner this evening is a bagel with Swiss cheese, and a mixed berry smoothie.

Tonight, I had green apples with peanut butter.

It was excellent! I cut the watermelon into small cubes, added fresh ribboned basil, thin sliced red onion, slivered almonds I roasted under the broiler and some ground pink Himalayan salt. Mixed. Refrigerated for about 20 minutes. So good! Much appreciation for bringing watermelon salad to my attention.

It's one in the morning, I'm sleeping through the heat of the day so this is my dinner time. I'm having chicken in foil packets like we used to make in Girl Scouts. Not quite the same at home in the oven but still pretty tasty. Golden Delicious apple for dessert. Water and milk to drink.

Do you cook all these tastie-sounding dinners yourself?

I was too hot to eat real food. After I fed the pups, we all went outside. Right at dark, I finished mowing some side yards and hard to reach places while they played.

I am eating dinner right now. I scooped Blue Bell vanilla ice cream into a glass of chocolate milk. Sooo good! :)

Yes i cook a big majority of meals these days. My dad can't help much since hes been in and out of the hospital. Mom has to take care of him.

I had a super filling and yummy dinner, thank you. I tried a Mann's Nourish Bowl. The Chipotle Southwest one. It has cauliflower, kale, kohlrabi, sweet potatoes, black bean and corn salsa and shredded cheese. It was delish and really good for me. A big ole bowl was only 220 calories! I had a small piece of toasted naan with it as well as some flavored water and a handful of gummy bears for dessert.
