Its my joy just to be alive, like anyone i have my aches & pains but the fact that i can walk freely along the promanade or in the park, eat and drink what ever i like and have a great family, partner and friends make me thankful for it all..................

Hmmmm what brought me joy today? Having two beautiful deer leap out from the woods, and across the road- about 7 feet from my front bumper on my way out this morning... and not hitting either of them.

The compassion and understanding of an AMAZING and dear friend. FINALLY truly excited about moving!! (no apprehension or regrets or fear of the unknown/possibly being stranded in a strange place) Getting final plans in place. The birdies outside my window... I'm as happy as they are with their little tweets and twitters!! |

A shivering struggling new client reached through my widow today and touched my hand, looked me in the eye for a second, and said "thank you for being so nice. I wasnt sure I could do this today. But now I think I can and its going to be ok"
Damn. I wasnt even going out of my way, just doing what I normally do. It made me feel like I was, at least for today, doing exactly what Im supposed to be doing. Its the kind of thing that makes a small paycheck ok. Cause the work FITS. I had joy today cause I felt I was doing a good job, just by being me, and being there. How frellin cool is that? |
Lunch is served.
This Thai shrimp salad I just whipped up. With jicama, carrots, celery, green onions, fresh cilantro, mint, lime juice, fish sauce and a pinch of sugar. It's virtually fat free if you don't sprinkle crushed peanuts on top. Soooo good and refreshing. I added a couple of dashes of tapatio as well just for a kick.

You might like this... it is a nice side dish for roasted chicken Spinach and White Bean Salad Fresh spinach, 6oz 1 can white beans, cannellini 15oz 3 - 4 shallots 2 tsp olive oil 1 tbs white Balsamic vinegar 1 tsp Dijon mustard 1 tsp Herbes de Provence (or other spices you like/have) 3 tbs olive oil Slice shallots and sauté in oil over medium heat until brown and crispy, 20 minutes. Do not let burn. Open, drain and rinse beans. Wash spinach and tear up if necessary. Put into a salad bowl. Whisk together vinegar, mustard and herbs. Slowly add olive oil, whisking constantly until vinaigrette is thick and creamy. Add about half to the spinach and toss well to coat. Add the remaining dressing to the beans and stir to combine. Arrange the beans on top of the spinach. Divide the shallots and sprinkle on top. I also saute the spinach in fresh garlic and add crumbled bacon if I have it |

My office mascot came pouncing and prancing into the room with such a happy face... reminding me it's time to take him out. Then he proceeded to chase his tail... and Tashi came dancing in and stole his favorite stuffed froggy!!
