I have had cellulitis in my right leg this week for the third time, so there has not been a good deal of cooking. :(
Last night I put a chicken in the crockpot, and sent Kasey to KFC for mashed potatoes and gravy, macaroni and cheese, and a big vat of coleslaw. A girls gotta do what a girls gotta do. ;) |
lol, loved MsTinkerbelly's phrase: "A girl's gotta do what a girl's gotta do" because that's kind of what has happened with me, lately.
I gave in to my 'sweet tooth' and had a giant bite of Orange cake with orange flavored frosting, and while it tasted SOOOO good, I probably won't do that again. *lol* I've mostly been dining on fresh garden salads, homemade soups, and not dining elsewhere other than what I make for dinner here at home. I miss Chinese take-out menu foods, the most. I may have to try sinning that way, sometime soon, by having some Crab puffs and some Mongolian beef stir fry. Last night, I had steamed broccoli spears and melted Chao Field Roast cheese on top of the spears after it steamed. *Yummmmm* |
You're making me hungry for Chinese food! I don't know what I'm having for dinner yet but I do know whatever I decide on, it will be less than I want so it better be good.

I cooked pork cutlets in panko crumbs, an arugala salad with apples, sunflower seeds and celery. Dressing was a bit of lemon juice and olive oil. ciabatta bread with minced garlic and butter on top.

I had a wonderful plate of mixed seafood. Shrimp, scallops, cod nuggets, tater tots. (my veggie, lol) Lots of seafood sauce.

Pizza! Italian sausage, mushrooms, salami, beef, onions, feta.

I made my own red enchilada sauce, it was easy.
Going to make enchiladas, pulled pork, spinach and some cranberry cheddar cheese. Feeling a little gourmet chef-ish! |

I had grilled chicken chunks with rice pilaf, steamed mixed veggies and the last of the mac 'n cheese. Water to drink. It was all well and good until I opened up the bag of peppermint bark squares. :blink:

I threw some pasta/italian sausage/spinach dish we got from Costco in the Instapot .. its pretty good.
