Roasted Corn Chipotle Relish ….. with jalapeno, sliced fresh peach, and Quinoa; plus some home-made corn chips (warm and crunchy). I can't have honey or tomato often, but I did squeeze fresh lime over it and had some smoked salmon. So delish.

I had an Amy's nondairy bean burrito. I added red salsa, onions, sour cream, and cilantro. It was quite good.
I also had celery and tofu "egg-salad." Sometimes I can't get enough of celery :eatinghersheybar: |

Dinner
I am cooking up storm. Homemade spaghetti for dinner from scratch. Also, patty sausage and pigs in a blanket. I have a nice red wine for dinner.

I made myself a salad with tomato, carrots, sunflower seeds, crumbled bacon and some steak from yesterday. I grated a little parmesan and added a small amount of dressing. It was pretty good.

I bought a bag of crumbled frozen Beyond Meat (aka vegan meat substitute). I sauteed it with bell pepper and onion and spaghetti sauce and some garlic powder. I was going for the "Sloppy Joe" vibe. However, it ended up being rather bland. Any suggestions? At least it was very filling.
I also had rye crisps with mozzarella cheese and green salsa (aka nachos). Oh, and an ear of corn at a street fair. |
Last night was ribs and roasted potatoes.
Tonight was chicken quesadillas. |

I love meatless crumbles! Morning Star Farms makes a great chorizo crumble that has good flavor. It's vegan and non-GMO too. The veggies sound great. To me, the only thing you're missing is either a sauce or some spices. Without either of those, it's bound to be on the bland side. I followed that up with a version of chicken pot pie, some apple cider cake donuts and my oj/pom juice blend I like. There's a brand at Stop 'n Shop that has two homemade pot pies in 36 oz tins. One has dark meat and one has white. The one with white meat also has pearl onions, which I LOVE so I got that one. Both were on sale and, of course, the one I prefer is more expensive but I got them! There was a bonus buy on it and I got another buck off, which means it wound up being cheaper than the cheaper one. Ha! Take that! I got a little peckish a couple hours later and had some more grapes and I feel fine now. |

I love roasted ears of corn. There's a family owned fruit and vegetable farm nearby, and I only got a couple of the last of ears of corn they had, the other day. But their entire crop will be harvested next week, so I am going to be stocking up on a few good ears of corn, so I can have it for dinner, while it's in season.
Tonight I had two small meatless patties (chiKn flavor/type) on a small bed of salad greens. I cooked the two patties with a frozen blend of quinoa and kale, and when it was finished cooking, I just put it all on top of the bed of greens, then smothered it lightly with my vegan Caesar salad dressing. I also sprinkled a few chopped walnuts on top, too. Next week, I'm going to have corn every night. *lol* :hk28: |
Whole milk, a scoop of cottage cheese, handful of pistachio nuts and some tea. It's like Old Mother Hubbard's around here but I don't want to bother the kids. Since they both have to work tomorrow today was the only honeymoon they got. They're going to take a for real honeymoon proper when schedules sync up. So bummed because I left the wedding last night with two cupcakes I intended for lunch today but forgot them in their stepmother's car after she and my ex dropped me off at home. Damn, she gets everything good of mine.

Last night I had Vegetable Korma that I made from a recipe.
It turned out good but homemade didn't taste the same as restaurant style. Probably because it was healthier. (The restaurant probably uses cream and the recipe used coconut milk.) I will be taking leftovers for lunch and I'm looking forward to it. I would totally make this again. Recipe here. |

I also had a frozen / microwaved green beans with almonds, EVOO, and garlic powder. As the saying *kind of* goes, "It was all good :police: |

Amy's individual size cheese pizza. For some reason... I think this is the best thing in the world. It tastes like a pizza bagel and has a "childhood" vibe to it.

My late lunch/early dinner was chili with meatless crumbles, 3 kinds of shredded cheddar, sour cream and tiny cornbread loaves cooked with hunks of jalapeno in it (not my choice but it could have been worse). I toasted and buttered the cornbread and had flavored water to drink. Nerds for dessert. The blue ones are my favorite.

We went with my brother, Dave, and his husband, Jan to a vegan restaurant called "Go Zen."
We shared a bunch of totally delicious dishes: sweet and sour soy chicken (nodding at RebelDyke) hot and sour soup wonton soup stuffed tofu pineapple fried rice moo shu vegetables spring rolls miso eggplant vegan raspberry cheesecake |

There is a family owned fried chicken and fish place next to my PT place. I bought mom a three piece dinner and chicken tenders for my lunch tomorrow. I ate one chicken tender for quality control.

Ham hocks and pinto beans crock potted for 9 hours-with onions, celery and carrots.
Sea salt, cracked pepper and a splash of chili-pepper for seasonings. Homemade corn bread with butter. We had our first hard freeze and dusting of snow yesterday/over night. Its that kind of day! |
