Did you get to Epcot this time around? They used to have these 2 little snack type places in the basement. It doesn't sound like what you were looking for, just wondering if they're still there.

It was, at the time, one of the only places a vegetarian could find food in the parks. Scoring veggies is probably not difficult now, this was way back in the 90s when there weren't as many vegetarians around.

I did get to Epcot, and the Food and Wine Festival was going on. I had a few tasty nibbles. There were _lots_ of vegetarian choices - that seems to be a trend for Disney menus now. A lot of it sounded very delicious, although I admit I didn't try any.

Not sure what you mean by "2 little snack type places in the basement". I can't think of any place like that - sorry. Epcot's undergone makeovers since the 90s, and it's undergoing a big one now as well.

Pizza with lots of arugula on top.

Slices:
gluten free cracker type crust with vegan cheese and squash
spelt crust with regular cheese, pizza sauce, spinach, olives, and tomato
"Mother Earth"- spelt crust with vegetarian meatball and veggies and pizza sauce (no cheese of any type)

Ben & Jerry's salted caramel core for dessert

Tonight we are having a new roast chicken recipe that I'm excited about - the chicken is rubbed with a bunch of warm spices like cinnamon and clove before roasting. I'm gonna make a cranberry apple sauce to go with it, some potatoes, and a salad.

I'm also making the beef stew for tomorrow's dinner today. Stew is always more delicious the next day after it's had time to make flavor babies. I'm always looking forward to leftovers whenever I make it, so, since I have the time, I figured I'd just make the whole pot be 'leftovers'.

Late lunch/early dinner at one of my favorite seaside restaurants. I had yummy shrimp and Gouda grits with mushrooms. The appetizer was grilled shrimp in a pico de gallo sauce and dessert was key lime pie. Iced tea to drink. The company was lovely.

nothing but fast foods and microwaveable stuff. Been way tooo busy to cook since the white chili day like nearly two weeks ago.

so reading about all the yummy food everyone else has been eating is making me hungry.... (telling myself: soon! soooooon.... i will hopefully get back to cooking...and hopefully dancing in the kitchen again) :sunglass:

Last night was the last of the roast pork and I wrapped it and some mushrooms in a warm totillia with a glass of sangria. Perfect way to finish up the leftovers.

Cubed:

Yellow summer squash, zucchini's, mushrooms, red onions, celery and red potatoes-

Tossed with:

Minced garlic, rosemary, parsley, sea salt, fresh cracked black pepper-

All marinated in:

Splash of olive oil and Italian dressing for 4 hours-

Roasted in the oven!

Bottle of Rose' Wine-

425 degrees for about 30-45 mins- I used a sheet pan to spread it out evenly. The *char* made it so tasty! As a side note: I tasted it before I baked-and easily could be a fresh *salad* as well.

We had pizza last night. Pete can’t eat dairy, so I got her a vegan pizza at the supermarket and she picked up a cheese pizza at what passes for a pizzeria in Western Mass. She loved hers and I enjoyed mine too.

I’m making chili today with pinto beans and ‘chorizo’ crumbles. I’ve cooked a lot in the last few weeks, and the chili has been the coziest and the yummiest.

Recipe for Rock On
 
Spinach Alfredo Pasta Bake

Ingredients

One pound pasta any kind (I used spaghetti)
Two jars alfredo sauce (each jar 15 oz)
One package frozen spinach (can be 10 or 16 oz your choice)
One package pre-shredded cheese any kind (2 cups total - I used Italian blend cheeses)

Directions

Defrost the spinach.
Then squeeze all the liquid out of the spinach that you can.
(I used my hands but you can use a colander if you prefer)

Put the spinach and the alfredo sauce in a pan. Mix it together and warm it up.

Meanwhile cook the pasta according to the directions on the box. If you're using spaghetti I recommend breaking it in half before cooking. This makes it easier to mix later on.

Pre-heat your oven to 350.

Once the pasta is done and you have drained it mix everything together except the cheese.

Put this in a 9 x 13 pan that you have already sprayed with Pam or olive oil. Then sprinkle with cheese on top.

Cook for 20 to 30 minutes - I checked it starting at 20 minutes to make sure the cheese didn't burn.

Now it's time to eat and enjoy!

I made spaghetti squash for the first time. Served it with marinara and grated some parmesan over it. It definitely doesn't replace pasta. I also roasted some asparagus wrapped in prosciutto. It was awesome.

If you make spaghetti squash how do you eat it? I am thinking butter and garlic would be good. Something simple and light.
