I barbecued today.
The food included a T-bone steak, Ribeye, corn on the cob, sweet potatoes, baked potatoes, and asparagus. Cheesecake for dessert and peppermint tea to drink. Yummy! :bbq: |
We ordered takeout from Applebee's, and I got the steak fajitas.
I have to remember never to order that again. Tough, flavorless steak and bland rice. Tiny, tiny servings of condiments. It reminded me of when I was little my mom would get this LaChoy pepper steak in a can. I must have been thinking of Chili's fajitas when I ordered them. |
We had chili last night. I made 12 portions a few weeks ago and froze most of it.
Pete made corn bread and there were 11 portions in the pan. :| I had a bad health scare, and I’ve been very careful about what I eat. Cooking at home is the easiest way to have yummy food. |
Last night was oven-baked ribs and white beans.
Tonight will be leftover ribs and mushroom stir-fry. |

I had mushroom trio pizza, mini honeycrisp apple scones, water and tiny perfect little peppermint bark squares.

Breakfast for supper: Half a cup of organic rolled oats with organic chia seeds, hemp seeds and flax seeds. Unsweetened Oat 'milk' and cinnamon, on top of it. Water to drink and a cup of organic chamomile herbal tea.

Everyone else had fast food but I made tuna salad and put it on a slice of 12 grain whole wheat toast.

Dinner...
Romaine lettuce with cucumber, avocado, hemp hearts, cashews, strawberries, dressed with a little bit of lime and pink Himalayan sea salt. I also had quinoa with roasted red bell pepper.

I'm eating a chickpea salad right now. If I had a quarter for each piece of onion I pulled out of this thing, I'd be a wealthy woman! Water to drink.

Crock pot beef stew. Beef, onion, celery, sweet potato, and carrots. Beef stock, salt and pepper. This reminds me. I better go put in a bay leaf and a few herbs.

Last night I had stuffed steak with gravy, fried shrimp, a alligator sausage creamed/or cheese appetizer, and cream brulee. Shared food in New Orleans.
So yummy! Not sure about tonight yet but I am sure there will be seafood. |

Air fryer chicken thighs with bbq chipotle seasoning Veggies in air fryer as well, carrot, yellow squash, and a few slices of sweet potato. Asian thai ginger coleslaw. I added more ginger, rice vinegar and sesame oil to a bottled thai sauce I have. And all in less than 30 min. Thank you Rachel Ray for training me, lol |

I am having several Gardein Meat-less Meat Balls, with steamed broccoli buds, and it's all dressed up pretty in my favorite Caesar dressing that is watered down with Good Karma Flax Milk. It is delicious and it hits the spot just perfectly. All I need now is some dessert. I should make a small cup of sugar-free Lemon Pudding. *yummm* |

We went out for dinner. I had:
- cheddar cheese biscuits, marinara dipping sauce - cheeseburger, medium, cheddar cheese - waffle fries, bleu cheese dipping sauce It's all about the cheese! |
I had two vegan White Castle black bean burgers with extra crispy tiny tater tots. Water to drink and Nerds for dessert.

Diet ginger ale Sugar free vanilla pudding will be enjoyed in a few. |

Green split pea soup made with potatoes, carrots, bay leaves, vegetable seasoning, and half of a whole wheat bun cut into rounds and toasted.

I had turkey, mashed potatoes, steamed carrots and broccoli, water and strawberry shortcake.

Right now I'm having a little bit of cottage cheese and a few grape tomatoes while I wait for the ground beef to finish browning so I can make some homemade tacos.
