I've been thinking about spaghetti so I think I'm going to whip up a pot of that so I'll have easy to heat meals through the week.

I have just been informed that we need a grill... shrugs....not that i disagree, but there is no place to put one, and my last apartment did not allow for us to have one...

So...for now... Arby's will have to do for dinner.

I had spaghetti with super veggie pasta, fresh Parmesan Romano cheese and oven toasted and buttered Scali Italian bread. Delish. Even with fake meat in it, it's not bad.

Dessert was margarita ice cream.

I made coconut chicken (like coconut shrimp, just minus shrimp). I cut chicken into bite size pieces, sledged it thru coconut flour, dipped in egg then rolled in unsweetened coconut flakes. It was only 10 minutes in the air fryer. Super easy.

No fresh veggies, so I broke into the frozen stash. Spicey okra was a hit!

Tonight..hmmm, Italian sausage was pulled out of the freezer. Let's see what I come up with..lol

Stuffed Italian Sausage
sliced the sausage and filled it with; cream cheese, heavy cream, garlic and onion. Topped it with diced tomatoes. Baked covered. In fact it's still baking now. In a few I'll top it again with mozzarella cheese.

The filling was piped with a zip lock baggie.
Mozzarella cheese was not here, I found some cheese sticks at the little market across the street.

And that is what's for dinner!

best friend made the most amazing veggie wrap w a vegan ranch dip..the carrots were sliced thinly..cucumber and i don't know what else..i must get her recipe for the veggie dip!

Everything. I had mozz sticks, dill pickle chips, tiny Skinny Cow salted caramel creations, steak, fresh pineapple and water but not together because fresh pineapple makes water taste disgusting for some reason. Maybe it's the acid.

Stir fried vegetables with chunks of chicken over Jasmine rice with a splash of gluten free soy sauce and dash of sweet chili sauce to give it some kick. I might have some of the dessert I made for dinner last night. Not much of a recipe just a tub of Cool Whip with a can of crushed pineapple and a small box of instant, pistachio pudding mixed. I used reduced sugar Cool Whip and sugar free pudding and surprisingly it turned out pretty good.

Last night was stuffed zucchini.
Green salad with strawberries and poppyseed dressing.
Sugar free strawberry jello. I added strawberries to that as well. That jello was really good, must have been putting the lemon lime soda that had lost its carbonation. Lol
Water to drink.


Its strawberry season in California now. Check the origin on the box. Get the California grown ones this week!🍓🍓🍓🍓🍓

It's strawberry season here too! We have several nice pick your own fields, if only it would stop raining for a week or 2.
(Heavy rain makes the berries soak up like a sponge, which makes them soggy with no flavor. Yucky)

I made strawberry jam a few days ago. Very happy how it turned out.

Tonight I made steak and potato for my roomie and steak and salad for me. (Boring, but I'm thankful my freezer and pantry are well stocked.)

Experimented with a new recipe. It was an Asian Flair night.
Spicey Korean bean sprout salad. (and it was super easy)
I also made a chicken stir fry with orange sauce.
Quite hot and spicy night!

Diet ginger ale and that really good strawberry jello that I made a few days ago.

I made a supper tonight which is super simple to make and it consists mostly of vegetables and meatless 'meat balls'. I used a 'rice' which is not rice but the 'rice' is made from vegetables. I also used zucchini squash (cut up in tiny sections), two scallion bulbs, grated garlic (1 clove) and simmered it until it was cooked, then added organic tomato paste (one small 8 ounce can) and a bit of filtered spring water and let it meld together, after I turned the heat off.

I also have freshly grated Romano cheese, so I'm sprinkling a tiny bit on top.

Water to drink, then a cup of herbal tea before bedtime. :tea:

I had ordered margherita pizza and a couple of meatballs last night. So tonight I had left overs. The fresh basil was to die for. Omg, so so good!

Sliced off bits of bbq chicken on top of boiled rice, drowned in a bottle of korma Indian cooking sauce. May not be fancy but I'm quite convinced 90% of the world doesn't eat this well. So, I'm grateful.
