Last night I took the easy way out for dinner,we had pancakes with butter and warm maple syrup and just for the heck of it we split a ham steak.Not bad at all.

I had a yummy late lunch... ( garlic shrimp and won ton soup) so I wasnt terribly hungry when I got home....but I had leftovers that I want to bring to work tomorrow and its very saucy...so I made some white rice to mix in. So I had a bowl of white rice with butter and salt and pepper....lol simple and pleasing....and zero nutritional value....
it coulda been worse....I couldve had ice cream... ;)

I had a few items in the freezer/fridge that needed cooking so they didn't go bad. So I tossed some ground chicken, and ground pork in a large skillet, seasoned it with some Tony's and some cracked black pepper and let that cook will I sliced up crookneck squash and zucchini. I also had two baked sweet potatoes that I cut into chunks. Once the meat was done, I added the veggies and sweet potatoes, a few dashes of Mexican oregano, and the last of my mojo sauce, (time to make more) and let it all simmer for 30 minutes or so.

This dish is da bomb! I am happy it turned out well because I will be eating it for the next 3 or 4 days. Lol! :eating:

Family Dinner Day with Pops, Pappy, and my Lamb. We usually do it on a Saturday or Sunday.

Today it will be a roasted turkey (that is making the house smell amazing), mashed potatoes, gravy, cole slaw, green beans (cooked down to a bacon-y goodness), and cheddar garlic biscuits.

It's heavy on the carbs but they like it that way!

I made turkey tacos with all the fixins, had some for lunch and gonna eat more for dinner. They are delicioso !!
I have less stomach issues with ground turkey than I do with hamburger so turkey won out !!

Swai
 
Swai fillets. If you haven't had White Swai, it is a light tasting white fish in the order of Orange Roughy. I keep it simple: broiled about 3 minutes with a coat of mayo, butter, lemon juice, garlic powder and Parmesan, mixed. Add Kosher Salt and pepper. I like mine with rice and a vegetable. You can also bake in a white wine sauce. Swai is inexpensive and easy; I don't like strong/fishy tasting seafood, so this is a favorite.
