Orema 09-06-2020 04:26 AM

Lemon/thyme tuna on a bed of spinach, chard and kale with a lemon/olive oil dressing.

Was going to have chicken medallions, but it’s too hot to cook. Probably won’t eat the chicken today and may need to toss it out.

Quick..toss the chicken in a skillet with olive oil, put a lid on it..
After it's cooked, freeze the cooked chicken and put the hot pan in the oven until it cools off.

😉😎 make chicken salad another day

My problem is I want to wait till I'm hungry before prepping and by then it's too doggone hot to do anything. Think I'll do just what you suggest and go and cook it now and can use it later today and tomorrow. Will add some italian herbs to the pan and a little lemon after it's done.

I just needed a nudge :) thanks.

Going to pull something out of the freezer, scrape the frost off it. If it's meat, I'll eat it.

clay 09-08-2020 03:02 PM

Bulgogi over sticky rice...my GF is vegan, but she had her daughter make it for me, she brought it to me. I have some for tonight as well. PLUS red cabbage slaw with edamame covered with ginger sesame seed dressing! YUM YUM YUM

firegal 09-08-2020 04:07 PM

Having Chicken teriyaki from Uni teriyaki and wok which is out of this world.

I had a spicy chicken sandwich on a toasted Artisano bun with MW and dill pickle chips. Pink lemonade to drink and mini club crackers for fun.

Orema 09-08-2020 08:46 PM

Peanut butter on low-carb tortilla. It hit the spot.

Kätzchen 09-08-2020 08:49 PM

I found some high-fiber tortilla wraps on sale, so I bought some. I like them a lot. I made a veggie wrap by using one of these new tortilla wraps. Quick to make, and simply tasty.

Water to drink.

For dessert: I am having a scoop of dairy-free ice cream and a special vegan brownie.

GeorgiaMa'am 09-08-2020 08:52 PM

Half a waffle left over from breakfast and a sugar cookie with Nutella. It's all about the sugar tonight.

I need to make a bunch of Belgian waffles, this weekend. Then, for a quick breakfast or snack or whatever, I can just toast one and slather a bunch of peanut butter or almond butter or name your favorite topping and have that for a meal on the run.

Thanks for the great idea, Georgia! :)

Bèsame* 09-08-2020 09:08 PM

Avacado spring roll.
Rocky Road ice cream.

I'm just craving marshmallows, really s'mores. This too, shall pass ..lol

Mopsie 09-09-2020 06:24 PM

Wednesday is my long day at work. (Leave the house at 5:45 am and return at 7:15 pm.) When I got home tonight I found potato soup waiting for me on the stove. Yum! My dad made it for dinner and they saved me some.... What a treat!

Watermelon for dessert

Watermelon will be dessert for a week and a half, big melon!

Gemme 09-10-2020 07:50 PM

I had a spicy chicken sandwich, the way I like it, and a couple of Outshine bars with water to drink but I feel like I need to nosh on something else so I'm going to grab an apple. The question is, do I go for the gold and have a Honey Crisp or do I go green and have the Granny Smith? Decisions, decisions....

FireSignFemme 09-10-2020 09:14 PM

Too tried and achy sore for anything fancy. Just diced avocado, a few halved grape tomatoes, topped with grated shredded cedar cheese and a splash of sweet Italian salad dressing. Water and some coffee I didn't finish earlier because I got so busy working in the back room. Maybe some canned peaches with half and half for dessert.

clementinefemme 09-10-2020 09:33 PM

Not technically dinner, but I just made a vegan chocolate cheesecake. It is SO good.

Orema 09-11-2020 04:19 PM

Bèsame* 09-11-2020 05:23 PM

I had a late lunch, which I'm counting as dinner. So that is the reasoning behind the S'more gelato I found. I can eat later😉

Still have that s'more craving..lol

Chicken and shiitake stirfry

It’s one of those bag-o-dinner things I keep in the freezer for when I don’t feel like cooking from Trader Joe’s. I read all the ingredients and surprise, there’s actually nothing bad in it. Guilt free convenience.

If it’s good I may have to restock that…
