I had linner after working with mom....

I had.... parmesan crusted chicken, rice pilaf and green beans....

my mom had baked scrod (which I tried....yum!) potatoes au gratin and green beans...

got home and had sherbert and half a slice of pound cake for dessert

I'm having black beans for dinner that my friend Hector made. His beans are so delicious that I really like eating them with nothing else. Hector isn't known for his cooking, but he can work with some black beans. I am so looking forward to this. I'll have some slices of tomatoes and an avocado with the beans, but that's it. And a glass of dry sherry afterwards.

yesterday I made cheesy goulash

today was a whole chicken done on the grill with brown rice and zucchini, yellow squash, mushrooms, onions, and peppers

I kept it simple today with cheese burgers and chips.

been working on the birthday dinner for the little woman.

Homemade mac and cheese
bbq ribs which will be done up on the grill for 4-5 hours
pulled pork cooked in the crock pot all day on low
baked beans
cole slaw
potato salad
corn on the cob
dinner rolls which will be done in the morning so they can rise by dinner time

for dessert I made her a Hello Kitty birthday cake with ice cream

Shrimp, sweet potato fries, a salad with cherry tomatoes and bacon bits and ginger dressing (thought I was grabbing the French...still good though!), sliced red apple and a cranberry pineapple muffin.

My 86 yo father...his birthday we brought to him....I asked Mexican,tai,Chinese Italian,salads, u name it.......he wanted. A bucket of KFC...it was his birthday...Im good for another 3 yrs on KFC...my dad a cheap date!

Maybe like me lol

tonight.....for dinner.....I am making.....deep breathhh

spaghetti squash with "homemade" sauce. As in...not from a jar, but made using (canned) crushed tomatoes....I got the idea and recipe from my Wildly Affordable Organics book

making the sauce doesnt have me harried....its the squash. I made one once while working for some persnickety people who thought being a chef was hidden in my resume somewhere....so....Im full of trepidation since I never did quite get the squash to do the spaghetti thing before. I shall google between now and then....

I got fresh garlic, peppers, mushrooms and zucchini for the sauce. I may run out for some fresh basil....Id love to make up some turkey meatballs to go with but....Im already stressing over the damn squash....fingers crossed...

My brain is running ahead of me and thinking since I will have sauce and basil and veggies (oh my!) I should make homemade pizza this weekend since we are doing lots of other fun stuff...hmmm

Grilled chicken thighs (skin and bone in) marinated in good olive oil, garlic scapes, salt/pepper.
Roasted broccoli. Small baked potato (halfed w/ wife).

Cut the squash in half length wise, clean it out, sprinkle on oil, salt, pepper and bake on 400 for 40 minutes. Yummmmmm

I made the spaghetti squash and sauce today instead. I had no one to cook for yesterday...nor did I today...but I wanted a real meal dammit.
my experience:
spaghetti squash is much harder to cut than I couldve imagined....easy to scoop out. I got it to do the stringy thing (yayyyy!) and the sauce was omg good. I honestly am shocked that I MADE IT!
Thanks for all the helpful hints I received. It really does take a village <3
