I made soup last night. Just used veggies that I thought would go together well. The base was baked pumpkin that I had in the freezer. I had to boil it to get the chunks apart, so I used that water to blend the pumpkin till it was smooth. I like chunky soup. In the soup pot I sauteed cauliflower, carrots, onion and corn till the onion started to brown,then added two cups of chicken bouillon, a can of cream of mushroom soup and more water. Spices were garlic, ginger, chili powder, lots of black pepper and curry powder. Super low in calories - 137 calories for 2 cups. Along with, I had a frozen strawberry bar.


Had the soup for dinner again today, but for a different tangy-ness I added cottage cheese before I heated it up. Had a butterscotch pudding cup for dessert. Later I had DeliMex taquitos which I have recently developed a passion for.

For dinner tonight I had a stuffed green pepper from Stouffer's.

Mashed potatoes and corn with slices of watermelon. Cutting up that watermelon was the most work for for me of that meal. The rest was either frozen or ready to eat food. Plenty good for a non cooker.

I did like it! I had the beef tamales. I think next time I will try the chicken. Since it was February and there were no good tomatoes to be had, I used canned store brand fire roasted tomatoes with green chilis (89 cents). I also added a couple of tablespoons of sour cream, which increased the calories a bit, but hey - I love sour cream on spicy food.

That sounds like a variation that would appeal to many people. I never have been much of a "hot" food eater. I like a little kick but not as much as many people I know. What I'm using for hot sauce these days is Louisiana Supreme Wing sauce. I like it on wings, or drumsticks which I usually substitute for wings.

Tonight I had some leftover steak, so I sliced it up into very small pieces, tossed it in the wing sauce, nuked it, and added tons of lettuce, tomatoes and onion. Pretty good tacos. I'm fighting a UTI, so I had some cranberry gummies and some yogurt to help in eliminating it. I also reheated a baked eggplant (aubergine) and onion dish I made yesterday. I'm going to post it on the "easy food" thread in a minute.

I've never had boudin sausage, but I looked it up and it sounds wonderful.
I've been to New Orleans once many years ago, but my partner was in such a hurry to keep moving on our trip that I never even got to have a meal in the food capital of the country. Some transgressions you can't forgive even after forty years, LOL

Panama City Beach, FL has two good New Orleans Creole style restaurants that I know of. On my recent trip I had a creamed shrimp scampi that was flavored with boudin. Delicious! And the best bread pudding I've ever had outside of New Orleans.

I didn't post Thursday night, but I actually cooked so I want to tell my tale. I had some steak pieces in the fridge that I wanted to make shredded beef out of for enchiladas, So on Wednesday I braised them with carrots and onions, Took hours for them to get tender enough to pull apart. I bought some street size tortillas, rolled the beef up in it, along with the carrots, topped it with Italian cheese mix and baked for 15 minutes. It was too late to eat when I got done, so I made up two freezer meals and plated up the third meal to eat Thursday for dinner. It was very flavorful - worth the effort.
Friday night I went out with my family. Had a wonderful hamburger with lettuce, tomato and onion. The service was terrible. We waited about an hour to get served, but all the food was good once we got it. We were celebrating my 6 year old g-daughter's 6th birthday so we had cupcakes and rainbow sherbet at my place. Fun Fun Fun.

I made egg roll in a bowl for the second time this week.


I made embellishments to my recipe that made it even gooder.

Good soy sauce, ginger and garlic for example. I’ve been having it on repeat on the weekly. It’s such a quick dinner too!

It may be the same thing that happens to me. When you sign on and get taken to the default page, go up to your URL line and erase everything after www.butchfemmeplanet.com and hit enter.

Hope that works.

A big bowl of sauteed veggies over chive and spinach linguine. I topped it off with a spicy chimichurri and a dollop of ricota cheese. So delightful.

Later I will have half a bran muffin and a few dk chocolate covered almonds.

Well . . . okay. There are two different squash casseroles that I make. One is made with fresh squash, fresh onions, and is made from what I would call scratch. It is the more delicious of the two, and it is also more work and takes longer.

The other squash casserole that I make (and the one I had for dinner) uses canned ingredients and is kind of just thrown together. It is pretty good, but in a way that is reminiscent of a cafeteria that my family used to eat at a lot. It is pretty easy and quick.

Are you, or is anyone, interested in either or both of these recipes? I'll be happy to share.

My new cookbook came and I've been pursuing the pages! Last week I made orzo for the first time. It's pretty tasty and easy. Tonight I'm going to make

Creamy Orzo with Asparagus and sweet peas. Now that's going to be a Spring meal for sure!

99¢ for asparagus? Definitely a flashback price. I thought I did well when I got it the other day for $2.29.
I've been subsisting on food bought precooked from my recent shopping center tour. Sweet onion and teriyaki sub from Subway - unbelievably good. Wonton soup. Bbq chicken legs and another sub - beef and provolone cheese- from WinnDixie. I still have a chunk of both subs left. I have a wonderful bunch of fresh veggies in the fridge that I hope I can talk myself into roasting. We'll see.

Inspired by Trader Joe’s Spicy Hummus Wrap
 
I found a brand of Lavish Bread made in a bakery up in Washington state, that is not sold in every grocery store but in specialty type grocery stores: I’ve been having half of a Hummus Wrap for lunch and dinner. For my hummus wrap, I spread two heaping tablespoons of refried black beans, two tablespoons of my favorite hummus (balsamic, or garlic, or roasted red pepper, or pine nut hummus) on top of the black beans, then sprinkle broccoli slaw and add a few pinches of sprouts, then a few slices of one portobello mushroom, then drizzle tahini on top of it all. Then roll it up and cut it in half for two main meals.

Pretty yummy and nutritious! :)

Well, I made the tortellini. I brought home a container of fresh bruschetta sauce and used that to mix in with spinach. Turned out pretty tasty if I say!
