Dinner (just finished) a large bowl of steamed mussles in white wine. Three fair size lobster tails. Small bowl of wild rice. Coffee.

Tonight it’s rotisserie chicken and roasted cabbage with a parsley-lemon dressing.
I found this recipe for roasted cabbage on youtube and I’m hooked. It is sooooo good and easy-peasy to make. Marko and the music are a bit annoying, but was worth sitting through it for the recipe. |

I made chili in the crockpot with beef ribs instead of hamburger. I’ll never go back. I’ve been eating it for days and it just gets better.

Baked salmon with harvest salsa. I went to a farmers market yesterday and found a variegated eggplant. I think I'll airfry that.
I also bought a really nice loaf of sourdough bread, but I already had 3 pieces since yesterday. I really need to lay low on that stuff for now! LOL |

Last night had chicken wings made in my new Ninja Crispi airfryer along with some lentils and rice made on the stove top.
The rice was perfect, I overcooked the lentils but they were still tasty and the wings were great. Haven’t decided how I’m going to store the airfryer in the tiniest kitchen in the world, but it’s a keeper. |

Tonight I warmed up some Bolognese pasta casserole and had a cup or two of herbal tea (chamomile).
No dessert. Plenty of clean chilled water. |

Chopped up lettuce, yellow pepper,cucumber, red onion, green olives, cilantro and a few chops of jalapeño. I Greek-ed up with feta and Greek salad dressing.
On the side, half of the left over salmon. Oatmeal cookie and milk. |

Last night I had wings in the air fryer and cabbage in the slow cooker. I shredded a quarter head of cabbage and added spices, ham broth, and wilted green onions to the crock pot and let it cook for a few hours. I added less than 1/4 cup of broth/water. Just enough to create moisture. It was tasty and tender. Exactly what I wanted. The good thing about cabbage is you can cut what you need and put the rest in the fridge for another day.
I tried roasting the cabbage in my air fryer and that didn’t work. It can be done I just have to make adjustments. Later today I’ll make some roasted carrots in the air fryer. |

Tonight: Grilled (in evoo) Italian 6-cheese sandwich with garlic aioli spread and dark red truffle beet chips. Delicious.
A few nights ago I went out for dinner with a friend. We had fish and chips with homemade tartar sauce and cabbage slaw. So good. Tomorrow is my turn to return the favor: an early afternoon lunch at country side food cart venue. I’m treating us to Hawaiian 🌺 Grilled Pineapple and chicken spears with homemade macaroni salad. Divine. :wine: |

Well, I was given two flounders. Whole ones! And that totally scated me
How do I cook them? So I took to Google I ended up wrapping them in foil and putting them on the grill. Little olive oil, garlic, ciltanto, onions and sliced lemons. Not too bad if I say so myself. Well, except for the bones!! Lol Made a little veggie packet for the grill. Now that's the way to go. Yummers. Grilled pineapple as a treat. |
I’m keeping it rather simple today: I made a Lavish wrap with avocado, and pan seared veggies in evoo, and a drizzle of garlic aioli. Delish!
I made homemade cupcakes for dessert: Pistachio-Pineapple-Blueberry-Pecan breakfast loaf-type cupcakes. No frosting. Just healthy goodness. ☺️🎁❤️ |
