I had two pork carnitas tacos. This was the best pork carnitas that I have ever made even better then a restaurant. Washed them down with Mikes Hard Lemonade.

Since I'm working 2-8 tonight I decided to make a dinnery lunch.

I took the remaining frozen shrimp and sauteed them in cilantro infused olive oil. I added some of those trader Joe's country potatoes that I love. They are herby and garlicky and just plain yum. I added some frozen peas since I wanted extra veggies.

I've got enough left for lunch tomorrow. Its so good I can hardly wait lol

I have a lasagna in the oven...we are eating our heavier meal mid-day lately.

mixed greens salad mix with imitation crabmeat on top.....pumpkin seeds....raisins...a pumpkin spice dressing (was a premade bowl from Wally's) BUT it sure was good!!
