Yes, the peanut butter cups are yummy. Some people have requested the recipe. Here it is. Consider it a thank-you for the warm welcome! :) What you'll need: Wax paper Skewers (can use kabob sticks or toothpicks) Cupcake pan (mini or regular size) Paper cupcake wrappers Sea salt 1 cup brown sugar 2 cups white sugar 3 cups peanut butter 1 bag vegan chocolate chips Drop of vanilla Optional additions to the peanut butter filling: graham cracker crumbs, maple syrup, vegan butter, peanuts, chocolate chips [If you don't have vegan chocolate chips, you can make your own chocolate sauce or you can simply roll the peanut butter in a mixture of powdered sugar and cocoa powder for a more truffle-like flavor.] 1. Combine peanut butter, a pinch of sea salt, brown sugar, vanilla, and white sugar into a dough. 2. Form dough into balls. Sprinkle with sugar. Place balls on wax paper. 3. Place balls in refrigerator for at least 1.5 hours. You'll know they're ready when they hold their shape well and are firm when skewered. 4. Melt chocolate chips, stirring frequently. 5. Line each cup with cupcake liners. Place a tiny drop of chocolate in each cup of your lined cupcake pan. 5. Skewer peanut butter balls. Then, dip them in the melted chocolate. 6. Place balls in cupcake pan. 7. Shape if necessary. If any chocolate comes off, just drizzle a bit of it over the ball. 8. Let rest for at least 1 hour, or until firm. May still be slightly pliable. 9. When cooled, put in the refrigerator 10. Refrigerate for at least 1 hour in order to achieve firm chocolate shell. 11. Enjoy! |
