Best Butch is coming over to watch a college game later.

We are grilling burgers. I'm doing sweet potato fries in the air fryer. I'm also going to make a shrimp cocktail instead of chips and dip.

We are also watching college football and grilling burgers and making fries! You've got me beat with the shrimp cocktail though. (yum!)

Yesterday I made a big batch of bone stock from a turkey. This morning I will put the stock into a crockpot with some turkey meat, mushrooms, carrots, celery, spinach, and cubed butternut squash. When I get home from work there will be a wonderful turkey soup waiting.

GeorgiaMa'am 12-09-2024 11:17 PM

- baked pork chops with my homemade "Shake n Bake"
- cornbread
- baby butter beans in ham stock
- Rice-A-Roni

Ruby Red Hasselback Sweet Potato appetizers

Tonight I’m taking some time to make a plate of appetizers: I’m making Hasselback Sweet Potatoes (ruby red) with feta, finely chopped walnuts, pomegranate seeds, fresh herbs (parsley) and a drizzle or two of evoo and real maple syrup.

Orange Sunkist soda
York Peppermint Patty

Chancie 12-10-2024 07:15 PM

I made dinner in my rice cooker tonight. Rice, plus olives, corn, chives, and Trader Joe’s plant-based chorizo. I added salsa verde to our bowls. There is plenty left over for Pete to bring for lunch tomorrow.

I think I’ll make natural hippy fish sticks tomorrow. I have a crazy knife that makes ridges in vegetables, so I can serve cool roasted potatoes.

GeorgiaMa'am 12-10-2024 10:55 PM

- baby butter beans
- corn bread
- a sweet potato

Happy Hump day, everyone.

Hey, I actually cooked. I made stuffed cabbage. I'm dieting, so I'm always looking for ways to reduce calories. Walmart has a good sale on ground turkey, so I bought some. I used 16 boiled cabbage leaves, 1 pound (2 cups) ground turkey, 2 cups shredded carrots, 1 cup chopped onions, 3 eggs. spices of your choice, Mix well. Fill your cabbage leaves. Roll them up. Chop up a few cabbage leaves to line the bottom of your pan, this will keep your rolls from burning or sticking to the bottom of the pan. When you're done rolling them and they are all in the pan, pour tomato juice or thinned down tomato sauce over them, making sure they are fully covered. They need to be covered while cooking. If the pan you're cooking in has a lid, use it. Otherwise wrap aluminum foil around the top of the pan. Cook in the oven at 375 Fahrenheit for 2 hours. I got six meals plus a bowl of soup, out of this batch and it cost me about less than $7 for all the ingredients. Also, they were delicious. 85 Calories each! Happy Day!
Smooches,
Keri

Keri, that recipe sounds really good. I'm going to make it. I'm curious - what spices do you use?

Our friend and her beautiful sweet obedient service animal are coming over for dinner. I made daikon pickles and chive sauce, and we’ll have baked tofu, sweet potatoes, and bok choi. Pete is making rice because she has more patience for washing it.

GeorgiaMa'am 12-15-2024 03:22 PM

Pizza! . . .

Bčsame* 12-15-2024 07:26 PM

The last of a chopped salad mix I had. I baked a little chicken cordon Blu and sliced it on top of the salad.
Sauteed a fall harvest blend of chopped veggies, butternut squash, sweet potato, red onion, parsley, sage and celery. Quite tasty, I found that at Trader Joe's.

A couple of little gingerbread people and a peppermint Lindor truffle.

Water

Lindt recently admitted that their chocolates used "exaggerated marketing" and its chocolates are not "expertly crafted". In 2022, Consumer Reports did a study of various chocolates which revealed that Lindt Excellence Dark Chocoate 85% cocoa had extraordinarily high levels of lead. Its Excellence Dark Chocolate 70% Cocoa had cadmium. Lindt is trying to settle a class action lawsuit now.

Lindt is not the only chocolate company with problems, but I won't be eating their chocolates any time soon. I really want to see that CR report.

GeorgiaMa'am 12-16-2024 11:51 PM

And I thought chocolate was a safe option since no recalls for listeria, salmonella, or E.coli. I would often joke when reading about another recall on veggies that chocolate or cake don't seem to be subjects of recalls. But alas, that bubble has burst. This article from consumer reports lists all the chocolate companies who make unsafe chocolate, especially dark chocolate. I'm crying a little bit.

Cin, thank you so much for finding that article. I'm looking for some Ghirardelli dark chocolate now, even though it's only described as "safer". I'll just have to save it for special occasions.

Googled it. Those potatoes sound so good!

Last night we had early christmas with my nephews and Solstice with my kiddo and their partner. I baked brie wheels in puffed pastry topped with a cranberry balsamic reduction, baguette, roasted veggies, and french fries that my nephews had requested.

nhplowboi 12-22-2024 12:51 PM

As it is all of 14 degrees outside I threw the dutch oven on the wood stove which was fired up. I loaded that pot with beef and chicken broth, veggies, mac elbows, mushrooms and chicken.
That will be supper and lunch and supper and lunch!

cinnamongrrl 12-22-2024 07:55 PM

I reheated (barely) a steak biscuit that I got yesterday somewhere in Virginia. I realized around 5p that I hadn’t eaten all day since I was crazy busy cleaning and unpacking.
It sufficed!
