I made an omelette with smoked salmon(of course), arugula, spinach, mushrooms, apricot & sage goat cheese, onion, garlic, ginger and salt n pepper. YUM!

cereal... that's all I had the energy for

last night was: an orzo feta salad over spinach, avocado, a variety of cheese slices, herb bread, sliced strawberries

I'm still figuring out dinner for tonight....no clue, my brain and body are exhausted from the winter clean up outside and trying to get the mower and generator ready for the season.... neither the body or brain are working well today.

last night was pot roast with potatoes and carrots. Stove top stuffing and Brussel sprouts.

- crispy sage dusted pork chops
- creamed potatoes
- broccoli cornbread casserole
- ice cream sandwich for dessert

Tonight we had hot dogs and pickles with chips for dinner

Ok..so I made some beans and rice and veggie momos (red and green cabbage, finely chopped onion and carrots, garlic, soy sauce...kind of like a pot sticker but Tibetan style)

Just finished asparagus and garlic pan seared in EVOO tossed with cheese tortellini and topped with a handful of grated Manchego. Paired it with a delightful Pinot Grigio.
