Vegan Chicken stripes marinated in Cajun seasonings and coated in wholemeal and white bread crumbs with brown Rice and 'Peas'.

Before I left work, I was asked to come back at 5pm and work again, so dinner turned into lunch and I left lunch in the fridge at work for dinner.

I fried up a few corn tortillas, used some refried beans from yesterday's dinner, chopped a roma tomato and jalapeno, topped it off with cheddar cheese....meatless tostadas, yum, yum, yum :)

Lunch should've been a bologna sandwich, sour cream & onion Pringles, vanilla Oreos and bottled water.

Popcorn shrimp and jo jos. Well, they are called jo jos in WA. Here, they are called potato wedges. Jo jos is more fun to say and so, I call them jo jos.

I Coke and 2 Pina Colada wine coolers later, I'm stuffed!

I'm making a pesto pasta, asparagus briefly steamed and then baked with a little parmesan/reggiano cheese on top, and for sylvie, italian crusted salmon, and chicken for me.

Last night was at a wedding where they had fried chicken, grilled chicken, mash potatoes with gravy, Mac and cheese, Cole slaw and biscuits with butter and honey.

Tonight we are having lasagna, salad, garlic bread.

I just put chicken in the toaster oven to bake
I put a small amount of water in the pan, tossed in diced jalapenos including all the seeds, sprinkled on cumin, garlic powder, paprika and a little Nature's Seasoning. Covered with aluminum foil to infuse my meat as it bakes. I will take the foil off after an hour (things seem to cook slower in a toaster oven from what I'm finding out) and let it bake until done.

I'll add smashed taters and a veggie (undecided)
A few Oreos when I'm finished eating my dinner :)

woke up super late and i'll be staying up super late so it seems like breakfast/lunch for dinner today...i'm thinking tuna sandwich and a salad with eggs and pasta twirls on top.

I haven't a clue.

I mean, I made it and it's good but I don't know what to call it. It's one of those 'a little of this, a little of that' dishes. It looks like a mess but it's quite flavorful.

Super lean (7% fat) ground beef, fresh mushrooms, green chilies and juice, horseradish sauce, light ranch dressing, and Heinz 57 sauce.

Cooked it down and now the house smells yummy.

Took a 94% fat free wheat tortilla and dumped some of it on top and sprinkled the tiniest dusting of shredded sharp cheddar.

I had some pickled beets on the side while I was cooking.

Dr. Thunder to wash it down.

But it's not. It's yummy. So sayeth the housemate who happily had the remainder.

all we had was mexican, including home made quacamole (i am good at making it now!), fresh beef, salad and yummy salsa...

i think i would have preferred the
perfectly EVIL cinnamon roll!
