for the Syr i made fried talapia and potatoes...

for myself and A., i made pan seared talapia with stir fry peppers, onions, celery and garlic, tossed in some slivered Almonds for a nice combination!

Salad for all.

last night I had onion rings and a strawberry shake. went to work and had a turkey sand and some bbq chips.

Last night's dinner...

Wheat penne pasta
with meat sauce, mushrooms & diced tomato
and a ceaser salad.
YUMMY.... with lots of leftovers for lunch today!

Tonight, we're celebrating D's aunt's birthday, so I plan on enjoying a tasty margarita & some kick ass mexican food!

In the mood for some good Asian food....
 
I'm going to make some boiled pork & vegetable-filled pot stickers served w/ some spicy Kung Pao Asian noodles w/ diced scallions, matchstick carrots, and chopped, fresh chinese chillies w/ a mandarin salad w/slivered almonds tossed lightly w/an Asian citrus dressing.

And a nice hot pot of Jasmine tea....:tea:

Tonight it is chicken chile verde. It has been cooking since this morning and it smells DIVINE!!

CHICKEN CHILE VERDE
3 pounds boneless chicken breast, about 6-7 medium
14 ounces green Mexican salsa
4 ounces onion, chopped, 1 medium
1 teaspoon pepper
4 cloves garlic, minced
1/4 cup sliced pickled jalapeños
2 teaspoons chicken bouillon granules
1/4 cup fresh cilantro, chopped
Iceberg lettuce, chopped



Place the chicken in a slow cooker. Combine the green salsa, onion, pepper, garlic, jalapeños and bouillon in a small bowl. Pour over the chicken and stir a little to make sure that some of the sauce gets under and between all of the chicken pieces. Cook on LOW 6-8 hours. Use two forks to shred the chicken once it's tender. Stir in the cilantro just before serving. Serve over chopped iceberg lettuce and add desired toppings.
