GeorgiaMa'am 03-14-2025 09:23 PM

- a bologna sandwich
- cream of tomato soup
- an almond croissant

GeorgiaMa'am 03-18-2025 05:50 PM

We had an appetizer dinner:

- coconut shrimp with some kind of tropical fruit sauce
- chicken nuggets with honey mustard sauce
- mozzarella sticks with marinara sauce

Brittany enjoyed the chicken nuggets and mozzarella sticks. She had hers plain.

Sourdough toasted with a splash of balsamic vinegar and spread with olive tapenade. Oh so so good. Almost bruschetta.

Appetizer night for me as well😉

- meatloaf
- mashed potatoes
- roasted Brussels sprouts

Gráinne 03-21-2025 07:43 PM

GeorgiaMa'am 03-21-2025 09:11 PM

Talk to me about this squash casserole please?

A big bowl of sauteed veggies over chive and spinach linguine. I topped it off with a spicy chimichurri and a dollop of ricota cheese. So delightful.

Later I will have half a bran muffin and a few dk chocolate covered almonds.

Lots of water

Well . . . okay. There are two different squash casseroles that I make. One is made with fresh squash, fresh onions, and is made from what I would call scratch. It is the more delicious of the two, and it is also more work and takes longer.

The other squash casserole that I make (and the one I had for dinner) uses canned ingredients and is kind of just thrown together. It is pretty good, but in a way that is reminiscent of a cafeteria that my family used to eat at a lot. It is pretty easy and quick.

Are you, or is anyone, interested in either or both of these recipes? I'll be happy to share.

My new cookbook came and I've been pursuing the pages! Last week I made orzo for the first time. It's pretty tasty and easy. Tonight I'm going to make

Creamy Orzo with Asparagus and sweet peas. Now that's going to be a Spring meal for sure!

Asparagus is on sale at Kroger this week for .99/pound and I was wondering what new and interesting thing I could do with it. Now I know!

* * *

For dinner we had:

- baked pork chops
- mac and cheese
- a diced yellow tomato with Ranch dressing

99¢ for asparagus? Definitely a flashback price. I thought I did well when I got it the other day for $2.29.
I've been subsisting on food bought precooked from my recent shopping center tour. Sweet onion and teriyaki sub from Subway - unbelievably good. Wonton soup. Bbq chicken legs and another sub - beef and provolone cheese- from WinnDixie. I still have a chunk of both subs left. I have a wonderful bunch of fresh veggies in the fridge that I hope I can talk myself into roasting. We'll see.

A hummus wrap and sautéed kale with tahini dressing.

GeorgiaMa'am 03-30-2025 09:43 PM

- French peas
- new potatoes in a parsley butter sauce
- diced tomato

GeorgiaMa'am 04-01-2025 08:32 PM

- the last of the French peas
- mashed potatoes

Bèsame* 04-02-2025 04:19 PM

Not really sure...
I could make a tortellini pasta salad with spinach

Or

Finish off the half of salad from lunch with little burger sliders wrapped in lettuce.

I guess I'll decide when I go into the kitchen..lol

5 Guys:

- cheeseburger with grilled onions
- fries

GeorgiaMa'am 04-03-2025 09:01 PM

- Beef Stroganoff (I overdid it a little bit with the sour cream, but it was oh-so-creamy and good!)
- a little salad with romaine lettuce, cucumbers, tomatoes, onions and balsamic vinaigrette dressing

Inspired by Trader Joe’s Spicy Hummus Wrap

I found a brand of Lavish Bread made in a bakery up in Washington state, that is not sold in every grocery store but in specialty type grocery stores: I’ve been having half of a Hummus Wrap for lunch and dinner. For my hummus wrap, I spread two heaping tablespoons of refried black beans, two tablespoons of my favorite hummus (balsamic, or garlic, or roasted red pepper, or pine nut hummus) on top of the black beans, then sprinkle broccoli slaw and add a few pinches of sprouts, then a few slices of one portobello mushroom, then drizzle tahini on top of it all. Then roll it up and cut it in half for two main meals.

Pretty yummy and nutritious! :)

Well, I made the tortellini. I brought home a container of fresh bruschetta sauce and used that to mix in with spinach. Turned out pretty tasty if I say!
