Dinner consisted of a bowl of cheerios. 'Dessert' is a fruit salad of apples, bananas, grapes and pineapples. Dinner tomorrow will be a 'fresh herb' salad with shredded matchstick carrots. Maybe some diced mozzarella sticks thrown in. Wishing I had bought some deli meat to go on top, hmrh.

Thinking I'll have organic butternut squash soup, turkey pastrami n swiss slammich on low carb bread, and some fresh green beans.
Oh yeah, almost forgot...this big ol coconut cake landed in my shopping cart today, so two guesses what's for dessert. |
i actually didn't eat anything tonight, i nibbled on some crackers.. dry ones.. i feel fine, just feelin' the blahs and no appetite i think, lol.

Gratin of endives in Béchamelle sauce, with pancetta, lots of garlic, Parmiggiano, and a hint of freshly grated nutmeg....lovely with a glass of Cabernet Franc from the Loire Valley.....and for dessert a pear and Fuji apple compote spiced with cinnamon, coriander, ginger, and a good shake of Nigerian cayenne. Nice to be home on a Thursday, because of snow, and cook up a storm!
I also made blueberry jam, a corn chowder, and a Thai green curry with pumpkin and chicken.....Oh! and Irish oatmeal for the next couple of days... Elle* |

Dessert: Chocolate cake w/Chocolate ice cream and whipped cream ..yummy!! It's The NATIONAL CHOCOLATE CAKE WEEK! So, just doing my part to honor it :cheesy: |
By request of two teenage boys, it's "chicken and rice"
...which means that I lightly brown boneless, skinless chicken breasts in a little olive oil...sprinkling them with salt, pepper, garlic powder and poultry seasoning. In a baking dish, I put 1-1/2 cups of basmati rice and pour 3 cups of chicken stock over top. Lay the browned (but not cooked) chicken breasts on top. Toss 1 chopped onion into the pan the chicken just left and saute until transparent, then put the onion on top of the chicken (and scrape in the pan juices just because)...cover the whole thing with foil and bake at 350 degrees until the chicken and rice are both done. :eating: It's yummy if I do say so myself...and works for my healthier way of eating too. :) |
