I made coconut shrimp in the air fryer.
Mom pushed the button on the rice cooker..lol I made pumpkin muffins earlier. I hope this is the only pumpkin thing this season! |
I had a salad full of all kinds of goodies: crisp greens, broccoli rice, imitation bacon bits, bacon jerky, crispy jalapeno strips, cheesy kale bits, carrots, cukes, tomatoes, crispy beet strips, shredded cheese, cracked pepper and a no sugar sweet vinaigrette dressing. I followed that up with red seedless grapes and a Keto nut and seed mix with some coconut flakes and dried cherries thrown in for dessert. Water to drink.

Homemade Vegetable Soup (with carrots, celery, minced garlic, fresh basil, baby red potatoes, parsnip and tomatoes off the vine).
We will probably have a few seeded crackers with veggie-base spread, too. Water to drink and hot herbal tea. :tea: |
Dinner
4 lbs. of mussels steamed in cooking wine, crab salad, rainbow trout filet. Coffee.

Burger dips, poor man's version of French dips, with Velveeta cheese and tomato slices. Dessert, well J is calling them brownies but she made them in a bread/loaf pan using zucchinis and they slice up like pound cake, have that same sort of texture. They do taste like brownies though, double chocolaty good ones because she added chocolate chips. Milk to drink. I'm still trying to decide it I want fries or tater tots to go with or if the dips and dessert will be enough.

I had 2 pieces of the fried chicken and pork gyoza, 4 pieces of the crab stick spring roll, 6 pieces of the brown rice salmon roll and two handfuls of red seedless grapes. Water to drink and fresh ginger on the side.

Chicken soup. Came out well and will have the same tonight.

I had a chicken breast, a Honey Crisp apple, a salad with what feels like 100 ingredients and Keto mix of nuts & seeds with some dried cherries mixed in. Water to drink.

Kale and spring-mix salad: with fresh blueberries, sliced banana, bits of pineapple, smoked almonds and a splash of mango salsa. We had this for supper yesterday, so we're having it again. It was simply delicious. :balloon:

Dinner
Chinese takeout: shrimp chop suey, shrimp fried rice, scallops with Chinese veggies, egg roll. Ice tea.
