Today I have been more active than I have been in a while, so being I am kinda tired we are having the fate full calzone for dinner.

I made chicken tenders and broccoli, and yellow rice for my spouse. Sweet tea for her and mint water for me. Blueberry pie for her dessert, Skippy pb bites for me. :koolaid::koolaid:

I had a chimichanga. It was just ok. I am not really sure what I am making tonight. It may be a shrimp and steak caesar salad, or it could be babyback ribs. Either way it will all be cooked on my new grill.

I marinated a massive chicken breast for two days...baked that with Brussels sprouts and some California blend.. garlic mashed potatoes rounded it out...

Shared with the pups. Their Easter should be special too... :)

I had a huge Easter meal so dinner was a little bit of Greek pasta salad and kale super food salad. I'm having Smartfood Delight Sea Salted Caramel now for dessert.

Shrimp and Caesar salad won out. I did go ahead and prepare the ribs for tomorrow night so all I will need to do is throw them on the grill.

Found this knock off brand of some sesame chicken at the local grocer and I swear its better than any other brand I have ever had. Having that over some steamed jasmine rice. Sweet tea to drink yum!

Panko tilapia...on the oven...1/2 cup black beans soup (the ones that came in a box!) ...small salad: shredded iceberg lettuce, onion, black olives, tomatoes...Dessert: 4 oz jello :)

Tonight consisted of garlic roasted brussel sprouts, oven roasted turkey, and cauli-mash.

Pretty healthy, until I added the tootsie pop and half of a chocolate duck. :D

I have no clue????? Maybe just get subs down at the corner store? They have the best subs around here. The other two mom & pop sub shops closed up, so I was thrilled when this one opened.

Did someone say subs? On Tuesday nights I have a class. That means it is Subway sandwich night for me. At the end of the semester, I should calculate how much Subway made off from me. Maybe I should learn how to make a decent sandwich?

Leftover lunch which was a layered dish with breaded eggplant, fresh mozzarella, roasted tomatoes,vans topped with a pesto sauce. It was delush. Both times!

It's a grazing kinda day...we have left overs in the fridge. Choices are: chili mac, samosas, pinto beans, and corn salad

If you don't already have one, get one of their points cards. You'll collect enough points pretty easily for a free sub.

Spinach Ricotta Shells with spicy Italian sausage.

When I have the day off, I like to try new recipes. Fresh spinach, yellow and red peppers, ricotta cheese with big shell pasta. It's a do over! And it doesn't take too long at all.

I hope no one falls off their chair but I ate a frozen dinner. Yep, about once a year I try one. This one had noodles and chicken. Either I was very hungry or they are getting better. I usually take two bites and throw it out but today I ate half of the dinner before giving up.
