Tried a new recipe today: I roasted spaghetti squash with garlic, butter, basil pesto, tomatoes, crushed red pepper and the usual Italian spices

I sauteed in butter some scallions with yellow pepper and a bit of garlic, tossed in some shrimp then mixed it all together and topped the spaghetti squash with it

Not too bad, I will be using spaghetti squash again as a pasta stand in for when I am tired of zucchini noodles.

I am going to make chicken avocado salad and have that on a bed of spring greens, along with pickled cucumber & onion salad. Watermelon for dessert! :byebye:

A little shrimp lo mein, a couple of steamed dumplings and a green salad w/ lemon & olive oil dressing. A bit of an oddball dinner I guess.

I put boneless chicken thighs and minced garlic in the crock pot on low before we left for hiking. Rissa made Mac n cheese to go with it. I was just happy with the chicken.

Ice cream for dessert

Pasta shells and mini meatballs in a tomato sauce. Mountain dew to drink (1 can), followed by water.

I had half a sandwich with turkey, salami, and cheddar cheese with a side of watermelon. Ice tea to drink and a chocolate chip cookie for dessert.

I had shelled peanuts with a box of raisins mixed together.

I'm going to split a big porter house steak with my son, there will be a salad plus a veggie.

I am going to bake some catfish seasoned with lemon, butter and an awesome Mediterranean rub. I may roast a few carrots, and have them along with the fish and a chopped green salad with a citrus vinaigrette.
