Thinking I am going to throw some soup together on the wood stove. It is COLD here (21 degrees with wind) and I think that will be good eating for a couple of days.

I haven’t been able to get home for two days because of the snow and the lack of plowing around here………..

But I picked up a rotisserie chicken and made a nice sandwich with pimento cheese. It’s a winning combination.

I heard an interesting story on NPR: Apparently scientists have decided that your gut can be just as healthy as that of a vegan or vegetarian, even if you eat meat, as long as you eat a lot of diverse plant material.

Tonight's dinner was:
- NY strip steak
- baked potato
- green beans

We have this same meal about once a week. I wonder if we should mix it up?

I am not too sure about what you heard on NPR,,,, but — I try to choose portions of meat that are the size of a card deck (pork chops, small portion of turkey, etc) and I don’t partake of red meats (too hard on my digestive process). But filling up on water and veggies seems reasonable. :balloon:

Tonight I’m going to make a small tuna casserole with Albacore tuna, fresh parsley and a freshly sliced jalapeño and do a sauce with Parmesan cheese and minced garlic. Avocado “toast” on the side, with a tiny sprinkle of chia seeds and flax seeds.

Purified water to drink (chilled, no ice).

It's been chilly and I have felt like home cooked meals.

Last night was Cornish game hen in the air fryer. Comes out just like a rotisserie chicken. A veggie medley of zucchini, onions and mushrooms sauteed with olive oil and red wine. Now I have left over chicken for salads.

Tonight was quick browned country style ribs. I left it in the cast iron skillet and added zucchini, onions and halved brussel sprouts. Added fresh basil. Covered loosely with foil and put it in the oven. This too got a dash of red wine. Ahhhh, the veggies were so good.

Tonight was Kraft Mac and Cheese. Nobody here has any energy to make anything else tonight.

I definitely want to try Cornish game hen in the air fryer.

I found a Ramon package in the pantry and I turned it into a simple Pho.
Left over meat from last night, onions, mushrooms, zucchini, garlic, ginger, fish sauce, hosin sauce and I swirled an egg in at the end. Oh, and spicy for me, red pepper flakes. Topped with chopped cilantro and sesame seeds. It was just what I wanted!


Air Fryer Cornish game hen, super easy. Coat with oil, rub with your fav seasonings, cook at 375° ( breast side down) for 30 min. Be sure to check that the juices run clear.

I’m treating myself to my favorite Asheville restaurant, Nine Mile. I’m not sure what I’ll get since they have spectacular specials, but it’s always amazing.

Soft weird concoctions..lol

Chipotle tuna mixed with cottage cheese. It was pretty good, but sorta looked like cat food. Lol
Olive oil and lemon couscous with spinach. Birdseye steam package. Really good!

Last night I made Socca for the first time in a long time. (A flat bread made of garbanzo flour with Mediterranean spices cooked in a little coconut oil on a cast iron skillet) I made little hand held size pieces and black bean soup to dip it in. Soooo good.
