Bean enchiladas (mix of black beans, mushed pinto beans, garlic, onion, salt, pepper, and cumin and cheese) served with Mexican rice.

I had smoked blackened salmon, & smoked mullet with collards and green beans. Then I bought some of the fish to go, for dinners at home this week. Good stuff!

I had jalapeno/cilantro hummus with reduced guilt tortilla chips and a package of Tahitian vanilla caramels...all courtesy of Trader Joe's....

Left over treats from the weekend barbecue: smoked artichoke hearts, smoked Salmon, Lime jello cheesecake pie (2 slices!), and a small, early season, potato casserole - which was made with mozzarella cheese and jalapeņo and a toasted almond crust. Simply divine.

I made a smoked salmon spread using some of the salmon I bought yesterday, along with some greek yogurt, capers, light sour cream, red onions, fresh dill and a little cayenne pepper. I will have this with some raw veggies and seeded crackers.

I had the remainder of the rotisserie chicken (cold) with just sea salt AND the rest of the jalapeno/cilantro hummus with tortilla chips... I'm stuck in a culinary rut... :blink: Ohh for dessert, 2 wee salted brownie bites that I bought at TJs weeks ago and forgot about...and they're still goodish! |

I had a big salad with baby arugula and baby lettuce mix, shredded Parmigiano Reggiano, sliced baby cukes, hard bacon bits and smoked real bacon bits, sliced cherry tomatoes and OG dressing.
I had cheese and crackers on the side with extra sharp NY cheese and Sweet & Spicy Chipotle Wheat Thins. Watermelon fizzy water to drink. |
I'm thinking left overs..the girls can have the enchiladas and rice, young blood can have some chicken tenders and I'm not sure what I'll have yet

I had a portabella Veggiburger on a multigrain sandwich thin with horseradish sauce, tomato slices, smashed avocado and a smidge of steak sauce. I had fresh tomato slices with a pinch of sea salt, kiwi slices and wild cherry fizzy water. Breyers cherry vanilla ice cream for dessert.

Pizza night came a day early. Mostly because I'm tired and feeling lazy.

Same as last night, smoked salmon spread with raw veggies and seeded crackers. The one difference being, I have blueberry pie for dessert tonight! :chef:

I sliced up a massively huge tomato I got at the farm stand on the way home...shredded some basil and oregano from the garden and sprinkled it with sea salt...
also... I had the remainder of my breakfast with it...an egg biscuit |

It is a "fishy" week for me as far as dinners are concerned, because I need to make good use of that smoked fish I bought Tuesday before it goes bad. Soooo, tonight it's smoked mullet tacos with mango salsa, and coleslaw on the side.
