The boi brought us some delicious Mexican food from a food truck he's been frequenting near work. We had:
- chicken and carne asada fajitas with peppers and onions - flour tortillas - refried beans that had that creamy texture that lets you just know they were made with lard - rice with vegetables in it The meats were juicy and the vegetables were all so fresh! Everything was flavorful and it was all cooked perfectly. |
- Shrimp Scampi
- Pasta - A Honey Crisp apple that was just on the cusp of starting to ferment, yet somehow it was still crunchy |
Herb butter salmon
Stuffed mushrooms Sunflower slaw with sweet onion dressing chef ..me |
Bratwurst over sauerkraut
Mom..butternut squash Me...green salad with avocado and garlic vinaigrette |
- pulled pork BBQ
- Texas toast - butter beans - Brunswick stew (outstanding) - an apple fried pie (probably the best I've ever had - a perfect flakey pie crust and apple filling that was so fresh and tasty with apples straight from the orchard, perfectly cooked and not mushy and juicy and sweet, and the whole thing covered in cinnamon sugar.) |
We snacked all day today, as we do on a laid back vacation, so I didn't make dinner. We nibbled on:
- cinnamon rolls - sausage cheese balls - bacon biscuits - apples - and, of course, beer |
Mmmm last night was
Honey garlic glazed salmon (super easy) Oven roasted zucchini and red peppers Mom..she got her fav steamed white rice |
- fried chicken
- a piece of almond cheesecake |
- chicken pot pie
- a Honey Crisp apple |
Shrimp alfredo
Sauted onions, red peppers, garlic, celery and zucchini. Mom...fettuccine pasta and sauce for her version. My version, I used the veggies as my pasta and added sauce to that. Hardly any carbs. Well a few in my Michelob Ultra. Lol |
- Ham
- Mac & Cheese |
Homemade Italian meatballs in marinara sauce + Freshly baked dinner rolls with butter and honey. Gingersnap Gelato for dessert. Water to drink.

Oven baked grouper fillets, smashed new potatoes with garlic & butter, orzo with fresh squash, cherry tomatoes, zucchini, diced green onions, and sweet tea!!! My wife made it for me!

Hamburger patty made in air fryer. I'm gonna say that it turned out pretty good.

I made sloppy Joe’s. And I have homemade cheddar bread in the oven. Once it’s done, I’m making berry cobbler. I have a turkey defrosting for tomorrow baking.
