I mixed up a wet rub before I left for work this morning and put it on a corned beef brisket. I put the brisket in heavy duty foil and closed it up tight. At 2:30pm, I stopped at home and put it in the oven, cooked it low and slow. When I came home, I chopped cabbage and onions as I fried bacon. Put the onions in the bacon grease with a couple tablespoons of butter, added the cabbage, red pepper flakes, salt and black pepper, let it fry and then crumbled the bacon in as I stirred the cabbage. I also made mashed sweet potatoes with a little brown sugar, a splash of maple syrup and a little butter...it was all mouth watering yummy.

A repeat of the above, except I used goat cheese instead of the kefir cheese.

I am veganizing this recipe (so easy) and this is what will be for dinner! (minus the salad stuff on top of the soup)

I have given up all bread, rice, potatoes and pasta so a nice small salad on the side with Amy's dressing will be perfect.
