I barbecued today.
The food included a T-bone steak, Ribeye, corn on the cob, sweet potatoes, baked potatoes, and asparagus. Cheesecake for dessert and peppermint tea to drink. Yummy! :bbq: |
We ordered takeout from Applebee's, and I got the steak fajitas.
I have to remember never to order that again. Tough, flavorless steak and bland rice. Tiny, tiny servings of condiments. It reminded me of when I was little my mom would get this LaChoy pepper steak in a can. I must have been thinking of Chili's fajitas when I ordered them. |
We had chili last night. I made 12 portions a few weeks ago and froze most of it.
Pete made corn bread and there were 11 portions in the pan. :| I had a bad health scare, and I’ve been very careful about what I eat. Cooking at home is the easiest way to have yummy food. |
Last night was oven-baked ribs and white beans.
Tonight will be leftover ribs and mushroom stir-fry. |

I had mushroom trio pizza, mini honeycrisp apple scones, water and tiny perfect little peppermint bark squares.

Breakfast for supper: Half a cup of organic rolled oats with organic chia seeds, hemp seeds and flax seeds. Unsweetened Oat 'milk' and cinnamon, on top of it. Water to drink and a cup of organic chamomile herbal tea.

Everyone else had fast food but I made tuna salad and put it on a slice of 12 grain whole wheat toast.

Dinner...
Romaine lettuce with cucumber, avocado, hemp hearts, cashews, strawberries, dressed with a little bit of lime and pink Himalayan sea salt. I also had quinoa with roasted red bell pepper.

I had butternut squash and pumpkin ravioli.

I'm eating a chickpea salad right now. If I had a quarter for each piece of onion I pulled out of this thing, I'd be a wealthy woman! Water to drink.

Crock pot beef stew. Beef, onion, celery, sweet potato, and carrots. Beef stock, salt and pepper. This reminds me. I better go put in a bay leaf and a few herbs.

Dinner
Last night I had stuffed steak with gravy, fried shrimp, a alligator sausage creamed/or cheese appetizer, and cream brulee. Shared food in New Orleans.
So yummy! Not sure about tonight yet but I am sure there will be seafood. |

Air fryer chicken thighs with bbq chipotle seasoning Veggies in air fryer as well, carrot, yellow squash, and a few slices of sweet potato. Asian thai ginger coleslaw. I added more ginger, rice vinegar and sesame oil to a bottled thai sauce I have. And all in less than 30 min. Thank you Rachel Ray for training me, lol |
