The boi brought us some delicious Mexican food from a food truck he's been frequenting near work. We had:

- chicken and carne asada fajitas with peppers and onions
- flour tortillas
- refried beans that had that creamy texture that lets you just know they were made with lard
- rice with vegetables in it

The meats were juicy and the vegetables were all so fresh! Everything was flavorful and it was all cooked perfectly.

- Shrimp Scampi
- Pasta
- A Honey Crisp apple that was just on the cusp of starting to ferment, yet somehow it was still crunchy

- pulled pork BBQ
- Texas toast
- butter beans
- Brunswick stew (outstanding)
- an apple fried pie (probably the best I've ever had - a perfect flakey pie crust and apple filling that was so fresh and tasty with apples straight from the orchard, perfectly cooked and not mushy and juicy and sweet, and the whole thing covered in cinnamon sugar.)

We snacked all day today, as we do on a laid back vacation, so I didn't make dinner. We nibbled on:
- cinnamon rolls
- sausage cheese balls
- bacon biscuits
- apples
- and, of course, beer

Mmmm last night was

Honey garlic glazed salmon (super easy)
Oven roasted zucchini and red peppers
Mom..she got her fav steamed white rice

- a piece of almond cheesecake

- chicken pot pie
- a Honey Crisp apple

- Ham
- Mac & Cheese

Homemade Italian meatballs in marinara sauce + Freshly baked dinner rolls with butter and honey. Gingersnap Gelato for dessert. Water to drink.

Honey, crisps are my favorite type of apple! I’m hoping to plant to those trees this year!

I made sloppy Joe’s. And I have homemade cheddar bread in the oven. Once it’s done, I’m making berry cobbler. I have a turkey defrosting for tomorrow baking.

Best of luck to you! It would be wonderful to have a couple of those in my yard. Unfortunately, I don't have a good place for them.

- green beans (Brittany helped us eat these)

Roasted chicken and celery dressing

I didn't get started cooking until late so unfortunately it is still in the oven.

I just made Chicken Fajitas with tons of veggies and melted cream cheese and scooped into burrito shells I browned on top of a hot stove burner (I set the fire alarm off, lol).

I'm waiting for my honey to get home, so we can chow down.

Last night was Margarita Chicken from Chili’s and it wasn’t bad. I had a few bites and will have the leftovers today.

Dim Sum. Fortunately, we have a few Chinese restaurants that will make dim sum for dinner. I was really craving siu mai.

- Shrimp siu mai
- Scallop dumplings
- Sticky rice
- Red bean paste sesame balls

- chicken and dumplings
- fried okra

We're having that, tonight (Chilis Margarita Chicken); plus our bartender makes the best smokey Margarita's ever.

Corn dogs. Instead of two boxes of the plain gluten free accidentally wound up with one box jalapeno. It seemed like an odd combination and I worried they'd be too spicy but nope couldn't much of a difference at all but then I drown them in ketchup anyway.

My youngest son made soft tacos for my oldest grandson's birthday, all were invited and his aunt made vanilla cake with vanilla frosting and rainbow colored sprinkles, his favorite.
