☆☆☆ What are you having for Brunch, Today??? ☆☆☆
I sometimes get up late and miss the traditional way of beginning my day with Breakfast!
So I'm having Brunch..... today! :hk28: I'm making an breakfast dish of russet potatoes, fresh corn on the cob (which I cut off the ear), and diced sweet onion and celery. Once it's browned up nicely, I pour scrambled egg mix over it, then cover it up so it balloon's into an soufflé. Once it's finished cooking, I top it off with Harvarti and Smoked Gouda cheese, to melt on top. Then I toast two slices of Franz Milk & Honey bread and butter it up good, and top it off with Raspberry Jam. Cup of Hot Cocoa with sprinkles of cinnamon, to drink! Delish! :stillheart: |

Today I had my early Saturday morning eye doctor appointment, so I decided to have brunch when I returned home. I warmed up some breakfast potato hash, added roast beef and melted Havarti cheese on top of it. Cooked two eggs over easy, and toasted two sourdough English muffins and buttered them and used the last of some yummy Raspberry jam. I sated my appetite, for sure! :hk28:

I slept in today, before I return to work this weekend, so I’m going to make a hearty brunch for myself, since my honey is already at work.
I’m going to pan toast two small circles of Naan, in evoo. In a different skillet, I’m going to reheat a small portion of my favorite veggie hash (shredded cabbage, blueberries and shredded sweet potato) then scoop it out of the pan and drop a two-egg scrambled mix and create a omelet with the veggie hash inside of the egg mixture. I will slice up half of an avocado to have on top of the Naan circles. I’m on my first cup of coffee right now, but will have another cup with my Brunch. And,,,, a bunch of water. I have had a rough week, these past few days, but I actually slept for ten hours, which surprised me when I woke up late today.
I cooked the last of the thick peppered bacon, then whipped up a small batch of pancake batter and added some blueberries. I’m on my first cup of coffee with coconut sugar and Oatmilk Cararmel creamer, after having two small blueberry pancakes with real maple syrup and a few slices of bacon. :bunchflowers: |

Today I made a small batch of pancakes with big blueberries and slivered almonds. I made them with Bob’s Red Mill Buttermilk pancake mix. I had one of them and the rest is for my meals over the next few mornings.
I topped off one pancake with butter and organic maple syrup and two organic eggs, Sunnyside up. Yummyyyyy. Oh, and a cup of coffee with Caramel flavored Oat Milk Creamer. :hk20: |
