Default 350 Calorie Lunch for Two

Salad -
4 C. Spinach Leaves (28 calories)
3 Large Iceberg lettuct leaves torn into bite size pieces (6 cal.)
12 Grape tomatoes cut in half (60 cal.)
1 C. Cucumber slices peeled (16 cal.)
5 Mushrooms small cut in half (20 cal.)
6 Red Bell Pepper Rings (18 cal.)

Salad Dressing Mix Together -
2 Tbsp. Wishbone Fat Free Italian Salad Dressing (16 cal.)
2 Tbsp. Caravelle Sweet Chili Sauce (30 cal.)

Toppings -
1 C. Chicken breast - boneless, skinless cooked and cubed (232 cal.)
2 Boiled eggs (160 cal.)
1 oz. Cheddar cheese weighed then grated (114 cal.)


This makes two salads of about 350 calories each and is exactly how I make it when my oldest will be here for lunch because he likes it when I put boiled egg wedges, bell pepper rings and cucumber slices arranged nicely on the sides of his salad plate. He also loves cheese on his salad. I make the whole thing and then sprinkle the tiny amount of cheese over the top of the salads so it gives the appearance of being more cheese than what there actually is.

Though my oldest watches calories being a guy and tall he can eat a lot more so I also make either a baked potato bar or soup with some type of bread combination to round out the meal for him. When I make this for just myself I don't use any cheese and sprinkle about a Tblsp. of pepitas on top of each salad instead. Then I have one for lunch and one made ahead in the fridge for dinner for the same calories because 1 C. of raw pumpkin seeds is about 114 calories too.
