Red Bell Pepper Soup
A friend makes this often and I always enjoy it.
Ingredients:
1 Red Bell Pepper
1/2 Cup of Cashews
1/2 Cup of Water
Mix it in a Vitamix or something similar until smooth and creamy.
Eat it cold or hot. I like it hot with a touch of salt.
It's delicious.
