I'm going to have soup. I keep adding to the left over home made soup I made a few days ago. It's a soup made from organic vegetable broth. Then I add baby crimini and portabella mushrooms, sliced scallions, grated fresh ginger root, baby spinach leaves, freshly grated carrots, sweet onion, baby cloves of garlic, and I sautéed some chicken thighs and sliced the meat into very small pieces. It's delicious and very filling. I might have a slice of toast too.
