There's a local chain in Albuquerque which makes fantastic, simple food. Their soups, I recently discovered, are made at each location by someone who specializes in making soup.

I stopped in today, and checked their soup for the day. Tomato Bisque. I love raw tomatoes; I love tomato sauce. I do not like tomato soup. I read the description of the soup anyway. It started: a parmesan broth... This soup was fantastic!

I'd never heard of a parmesan broth. It's a thing; I Googled it when I got home. Makes me want to find parmesan rinds right this minute and make my own.

Last week I had Mulligitawney Soup. I'm trying hard not to go there daily.
