supper planning-so far Limone Linguine with Zucchini Zoodles
1/2-1 lb. linguini
2-3 cups zucchini spirals (raw)
half a lemon-juice & zest
garlic clove, crushed
3-4 tbsp extra virgin olive oil
1/4 cup Vegan Parmesan cheese
3 tbsp chopped parsley
Salt and pepper

1. Cook pasta al dente, drain (do save a little of the pasta water)
2. Spiralize zucchini. (Do not cook) Place in bowl with lemon juice and zest, finely diced garlic clove & olive oil. Toss to coat.
3. Add pasta & (if needed, pasta water to moisten) parsley and Vegan Parm. Serve on dish w/a generous sprinkle of more Vegan Parm. Add a grilled french bread (if you wish). bien
