I walked next door to see if they had any nice looking squash, and I bought a few small Delicata Squash. I'm going to cut one in half and then stuff both halves with sliced up veggies, then bake them off.
Once they are done, I have some Thai peanut sauce to drizzle over them and will most likely add a few sprinkles of sesame and chia seeds. Maybe a few sprinkles of coconut (the unsweetened kind), too.
