I made two small omelet's for Rico and I. I used egg substitute, vegan non-dairy cheese, baby spinach leaves, and a slice or two of non-meat tofurky to create our delicious breakfast meal. To finish the omelet's, I sprinkled a chia seed and flax seed seeds on top of each omelet. Delish and nutrish.
