Take two eggs and whisk them with cream, then turn them into a warmed skillet with a drizzle of olive oil. Lay a small size burrito shell on top of the egg mixture. Cook on medium heat for about 4-5 minutes, then flip egg over to brown the burrito shell. Turn stove top burner to low setting while shell is browning. While it is browning, top off your burrito egg shell with chopped avocado, fresh jalapeño and add a bit of shredded cheese (mozzarella is purrfect),
Fold burrito egg shell in half, let cheese melt, then eat it all up.
