I’ve been hooked on adding cabbage to my daily meals. For breakfast I often do a two egg scramble with finely chopped cabbage and carrots. For lunch I sometimes make a cabbage “steak” pan seared in evoo with feta melted on top and a sprinkling of blueberries (it’s yummy), and now that summer is nearly here I’m going to make cold gazpacho soup with cabbage.
