I love Arroz con Gandules. Since I don't eat pork, I substitute more veggies and add a dash of crushed red pepper.

{hmm, some people use chicken broth,....others use beef gravy....I love a small lil bowl with olive oil, garlic powder, and Maybe beef stock...or chicken stock on the side...
