Hi Lips,
I don't have a recipe for the chicken part of my chicken and dumplings....I just saute minced onion and celery in olive oil, then toss in cubed chicken breast...brown it til it looks right. Then I season with salt, pepper, poultry seasoning, pour in a quart of chicken stock....let it simmer. Pour in a couple cups of milk that I shook up with a few spoonsfull of flour to be a thickener. Mince up some carrot and toss that in with some peas....just til it looks and tastes right.
Once it's thick I mix up my dumplings:
1-1/2 cups flour
2 tsp. baking powder
3/4 tsp. salt
3/4 c. milk
Don't overmix it...just til it's all blended and the dry ingredients are moist. Then I drop it onto the thickest parts of the chicken mixture (still bubbling on the stove) by big spoonsfull.....cover it....let it simmer 10 minutes. Take the lid off....let it simmer another 10 minutes. And eat!
